Garlic Dill Yellow Squash Pickles Recipe

 

 

Carla Hall Inspired Hot Fried Cauliflower with Garlic Dill Yellow Squash Pickles

Got a bunch of yellow squash that I have to use so I’m pickling. The yellow squash isn’t crunchy like a pickling pickle but it comes out pretty good and you can certainly pickle yellow squash when you have too many. I don’t do the formal canning because I expect to use what I made with-in a few months. This will stay fresh in the refrigerator for at least three months.

Ingredients for about 8 large servings

8 small/medium yellow squash – ends removed and cut in halves

1/2 onion sliced

3 oz fresh dill

3 cups water

3 cups white vinegar

3 cups rice wine vinegar

4 Tablespoons kosher salt

1 teaspoon celery seeds

1 Tablespoon + 1 teaspoon mustard seed

1 Tablespoon + 1 teaspoon crushed red pepper

4 Bayleaves

34 garlic cloves – chopped

1 Tablespoon + 1 teaspoon black peppercorns

1 Tablespoon sugar

Directions

Start with sterilized containers or bottles and fill them with the dill, squash and onions and set to the side.

In a sauce pot add the rest of the ingredients and put on medium high heat and slowly bring to a slow boil. Let it boil a few minutes.

Pour the hot liquid over the containers of squash and let it sit on the counter to it cools some.

After it’s cool cover and place in the refrigerator and enjoy in about a week.

Sin City’s Sweet Side – Some of the Desserts on the Las Vegas Strip

 

I was in Las Vegas only a few short weeks back. I do have a few more stories to tell and I thought after the worst mass shooting in US History maybe a “sweet story” would be a welcome today.

Las Vegas also known as Sin City offers many temptations.

One of the most famous desserts is Emeril’s Banana Cream Pie that’s offered at multiple Emeril Laggassi Restaurants on the Strip. Somehow this dessert is always perfection. Even people that don’t like bananas love this cake. This dessert is layers of moist delicious tasting cake with layers of these really perfect tasting bananas. The bananas taste better than normal bananas. There are tons of bananas in the cake with just enough cream and sauce and really rich chocolate flakes. This is a must do in Vegas.

If you are up for a some really fine dining and have dinner at L’atelier de Joel Robuchon you MUST ORDER the Les Tartes.

I just have to call this one Little Slices of Heaven. The variety of tarts varies but each little slice is stellar. You just might hear angels singing.

Pinkbox Doughnuts are voted best doughnuts in Vegas. Here we tried Key Lime and Chocolate Dipped.

It was on my list to find the Milk Bar in the Cosmopolitan and try the famous Milk Quake. It’s ice-cream mixed with a cookie or cake. We ordered the Strawberry Corn Flavor.

Sorry neither of us liked this one. Maybe it wasn’t made correctly? Ours was very sour like yogurt and didn’t taste like strawberry. The Corn bread Cookie also was savory. We tossed this one out after a a couple taste. Well on the positive side this dessert was the lowest in calories.

Maybe you’ve seen Celebrity Baker Buddy Valasco on TV also known as the Cake Boss. Here’s his Las Vegas Location of Carlo’s Bakery. We tried an Italian Lobster Roll. WOW it had crispy texture like raw thin noodles and was filled with hazelnut cream.

If you dine at Lago in the Bellagio you MUST get dessert.

This is what they served me.

It’s a work of art. It’s absolutely stunning. You must order dessert at Lago. You must go to Lago.

I haven’t found any dessert shop that compares to Jean Philippe with one location in the Bellagio and a nother location in the Cosmopolitan. It’s Willy Wonka to the max. They also sell chocolates, gelato, sorbet and pre made sandwiches to take out.

The artistry is amazing. I try a few every time I come here and everything is the best! (sadly the ones I purchased to take back melted so I couldn’t photo but I assure you the Lemon Desserts and Chocolate Cupcake are both amazing.

I also love the fancy chocolate art they always do here. Here are life size polar bears in chocolate.

On the right side is the biggest Chocolate Fountain…in America…maybe the World!

 

And that was just some of the Sweet Side of Sin City.

P.S. don’t even worry about the calories because you know what they say……

Carla Hall Inspired Hot Fried Cauliflower – Baked & Lightened Up Some Recipe

 

Carla Hall Inspired Hot Fried Cauliflower

This week on the abc cooking variety TV Show called The Chew Chef Carla Hall made this incredible sounding Vegan Hot Fried Cauliflower. The people that got to taste it truly looked like they ate the most delicious amazing food ever. As WONDERFUL and AMAZING as her recipe must be there is no way in the world that I can going to FRY and bread cauliflower and then ADD FOUR CUPS OF OIL TO COAT IT WITH. I just can’t do that…….My baked variation of Carla Hall’s recipe came out AMAZING. Thanks to Chef Hall this is the best baked cauliflower I ever tried.I didn’t make the recipe Vegan but it is vegetarian.  I kept the recipe pretty similar with the same spices. For a few changes I baked instead of fried because I’m still adding far more oil than I am comfortable with. I do strongly feel that you need to find whole wheat panko bread crumbs for this recipe to work out well because they seem to stay crispier in the oven and also turn a nicer color for the breading. Instead of water and ground flax seed I used eggs and dijon mustard (because I didn’t need to make it vegan) I also wanted the oil as a topping condiment instead of tossing on four cups of oil I only made two cups add drizzle on what I want. I don’t think I’ll even use a whole cup but I do note the more oil you toss on to the cauliflower the hotter it is…so adjustments can be made to use less oil.  After trying out the recipe I do feel I could have cut the spicy oil down to one cup….but I might have bumped up the spices since I’m only going to use about one cup of oil condiment. I also note for best results to shake the oil up well because the spices settle. Oh and you do need to serve the Hot Cauliflower with pickles because it’s just a magical combination that you have to try for yourself.

Ingredients for about 6 servings

1 cup flour

2 teaspoons sweet paprika

1 teaspoon cayenne pepper

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

4 large eggs –  beaten

2 Tablespoons dijon mustard

2 cups whole wheat panko bread crumbs (I don’t think regular panko works as well as a crunchy coating )

1 large head cauliflower – broke down into florets

Non Stick Vegetable or canola spray

pickle chips (to serve with cauliflower)

1 1/2 Tablespoons cayenne pepper (spicy oil recipe)

1 1/2 teaspoons smoked paprika (spicy oil recipe)

1 teaspoon ground cumin (spicy oil recipe)

1/2 teaspoon garlic powder (spicy oil recipe)

2 teaspoons kosher salt (spicy oil recipe)

1 teaspoon sugar (spicy oil recipe)

2 cups canola oil (spicy oil recipe)

Directions

Preheat oven to 350 degrees F and spray your baking sheet(s) with non-stick spray and set them to the side.

You need three bowls, pan or dishes for dredging.

First bowl whisk together flour, paprika, cayenne, salt and pepper.

Second bowl is eggs and dijon mustard. Mixed well.

Third bowl is the panko crumbs.

Take a floret in each hand and start with the flour mixture an roll the florets around till they are lightly covered in flour. Move on to the egg mixture and cover each floret with egg and lastly cover the florets with the panko. Place on baking sheets and space them out some. Repeat till all the florets are done.

Place baking sheet(s) in a 350 degree F oven. Timing will vary some …..depending on oven and type and size of cauliflower. For me it worked out as 45 minutes and then I turned the florets over and put them in for another 15 minutes and they were perfect.

While the cauliflower is in the oven you should make the spicy oil.

In a fry pan toast up all the dry ingredients on medium heat for up to two minutes or until the spices smell fragrant. Add the oil and gently simmer for ten minutes. Keep warm till ready to serve.

In Chef Hall’s recipe when the cauliflower came out of the oven she tossed it in a large bowl with all 4 cups of oil….You can do that with the two cups of oil or LESS of the oil OR drizzle or dip. The flavors do stay on better if you toss the cauliflower in the oil. I do note AGAIN…that the spices do settle so drizzling on the oil comes up better than dipping.

Anyway IT REALLY DOES COME OUT FORKING AMAZING!

All the crispy breading stays on.  Mine came out amazingly crispy. It’s Forking Delicious! The more oil you add on the spicier it is.

This dish is suppose to be served with pickles. I used my own pickled squash here. I didn’t publish that recipe yet. Maybe it’s coming soon.

Dining Out With Dogs in Metro Phoenix AZ September 2017

 

“We’re Dining Out Today!”

Dining with Dogs is just a “Fluff” story on how it was taking my dogs out to eat. We usually go to casual places with patios. I do note that not every patio is dog friendly and you must find out in advance if it’s ok to bring your furry friend(s). There are some rules to dining with dogs. It’s very important that you don’t let your dog sit on the furniture like in the picture below.

Dogs also should be close by your side at all times and dogs shouldn’t eat off restaurant plates.

You also need to be aware that most of the food you eat can be harmful or toxic to your dog’s health. You need to get a list of dog safe foods from your veterinarian. Basically you can do alright if you just feed your dog small amounts of plain meat with the sauce removed. It would also be a good idea to bring a collapsible water bowl for your friend. I try to dine out with dogs at off times. That works out best to avoid as many people as possible because many people don’t like to dine around dogs. Another thing to try to avoid is dining out with other people’s dogs because the dogs might start barking and you might be asked to leave.

Now that we got that out of the way…. It’s been another very hot summer around Metro Phoenix and it just got bearable to dine out with dogs in Mid-September.

We headed out to Banh Mi Bistro Vietnamese Eatery in Phoenix AZ. BMBVE is a Pho-Free Vietnamese Eatery. They specialize in the Banh Mi Sandwich but also do offer many appetizers, salads, noodle dishes, rice dishes and MORE! Today I got one of my favorites – the Chicken Rice Plate. I enjoy the very flavorful marinated boneless chicken thigh that is always prepared with a tasty char and is brushed with an appetizing glaze. I also get a nice refreshing salad accented with some pickled vegetable, Steamed rice and a pork egg roll.

The next weekend was unseasonably cool so we got to dine out again.

“WE are off to Pita Kitchen in Glendale AZ”

Pita Kitchen is a casual Greek/Mediterranean Restaurant in the Arrowhead section of Glendale AZ. Our favorite meal to order here are the Greek Salads. I like the Chicken Kabob topping best and I think the dogs like that one best too!

“! never had Greek Food before…..but something sure smells good!”

“Maybe you won’t like Greek Food Runt, you better leave it all for me”….”I hear Runts like olives. Maybe you better eat the olive and leave the rest for me.”

Nagoya Sushi Peoria AZ – UPDATE 6-4-2018 ***New Ownership

 

UPDATE*********6-4-2018 Since my review Nagoya Sushi was sold and is under new ownership with a different Chef. Everything I wrote is subject to change.

Nagoya Sushi is a casual sushi restaurant located in Peoria AZ ……a stone’s throw from Arrowhead Mall. This restaurant offers full service and does serve some beer, wine and Asian Liquor. The sushi chef/owner is well known in the area. He is an experienced sushi chef and his last restaurant was well received in the area.

The sushi I tried here was different. Everything I tried was delicious and I didn’t even realize how flat tasting sushi I tried elsewhere was until I tried this sushi again. It was like the taste was black and white and when I tried the sushi here everything turned to technicolor.

We started by sharing a Screaming “O” Roll that isn’t actually a roll but more of a salad called Tuna Tataki.

Lightly seared and pounded tuna that was dancing full of flavors and resting on fresh cut radish strings, sprouts and fresh greens. The tuna was carefully sauced and seasoned just so. It was very flavorful and delicious.

Then we went on and shared a variety of sushi that included Spicy Tuna Rolls and Nigiri Style Sushi (salmon, tuna, yellowtail).

The Spicy Tuna Rolls are really great! They have the correct rice to fish ratio. I like that they aren’t all mayo-ed up like many other places serve. Instead the fish is just full of pleasing flavors and it IS actually spicy. It is the most delicious spicy tuna roll I ever had.

The Nigiri Sushi was seasoned under the fish like better sushi places do and was topped with wasabi sauce. All three fish we tried were clean tasting and the rice underneath was delicious!

They serve wasabi sauce if you ask for it. (we like it more than the wasabi paste)

Service was warm, friendly and efficient.

Parking was easy as they are in a small newer strip mall with a lot.

I’m so happy they opened here as I can finally enjoy sushi in the area again!

Where the Fork I Went…… Fall Arizona Restaurant Week 2017 #EATARW

Fall Restaurant Week ran from September 15th-24th in 2017. There were over 160 restaurants participating. Most were offering three course meals at either $33.00 or $44.00. Some were offering couple packages for either the $33.00 or $44.00 and a few other special deals going on. This really is a time to discover a new restaurant that you haven’t been to. I’ve been to Match Cuisine and Cocktails at the Boutique Found:re Hotel before but yet again they have a new chef and new menu. So I felt the restaurant was new again. The Executive Chef is the FAMOUS Alex Stratta…….AKA Top Chef Masters, Iron Chef, James Beard Award Winning Chef, Personal Chef to Jesus Chef ( I made that one up). He’s very well known and has impressive Chef History and training. For restaurant week The menu sounds amazing so here I am again at Match Cuisine and Cocktails at the Found:re.

You step into the lobby and this some of what you will see.

Our First Courses were Tabbouleh with Citrus Marinated Ahi and Lobster with Spinach Agnolotti.

The Tabbouleh was Non-Traditional and was served over a passionfruit vinaigrette. It not their fault but the strongest onions I ever tasted in my life were used here. My husband said the lobster was cooked nicely and the Agnolotti were good.

Dinner was Halibut with Vegetables in a Parsley Sauce and Short Rib with Shallot and Potato Gnocchi.

Halibut was Textbook Perfect with a perfect sear and the flesh was moist and flaky. The Parsley sauce was a little flat…maybe the container needed a stir? The Short Rib was tender and flavorful. Gnocchi were tender but not gummy.

There weren’t any strong flavors in any of the above dishes (expect for the onions) For the most part everything was pretty mellow.

Dessert was a little bit of Tapioca Pudding with a little chopped fruit, topped with toasted coconut. Restaurant Week Priced at $33.00 (2017)

Another Night I re-Visited Christopher’s and Crush Lounge in Phoenix. I know I’m suppose to go to a new place but Christopher’s knocked it out of the park last year and I enjoyed a few dinners there since so we couldn’t resist. This restaurant is a little different than most. The Chef Christopher is an actual James Beard Award Wining Chef that owns and actually works in his restaurant. He personally greats everyone and ask how things were while he is working on the line.

They started us off with the amazing in-house made French Baguette and French Butter…Ummmmmm

First Courses were Herb Ravioli and Scallops and Tart of House Smoked Salmon. Words aren’t needed for any of the dishes…Here you just eat because everything (so far…every time I’ve been here) has been absolutely perfect and delicious.

Dinners were Buttery Sole Meuniere and Duck Confit Cassoulet.

Then we shared a delightful an Artisan Cheese Course. (Husband’s dessert pick)

Lastly we shared Chef Christopher’s REALLY Incredible dessert!

Parnassienne of Chocolate. It’s the most beautiful Mousse Tower I’ve ever seen and an amazing treat!

Then they sent us home with a whole baguette.

We always have a splendid dinner at Christopher’s and Crush Lounge. Restaurant Week Priced was $44.00 with optional wine pairing.

L’Atelier de Joel Robuchon – Amazing Dinner in Las Vegas NV – Worth a Fork

 

L’Atelier de Joel Robuchon is located in the MGM Grand Hotel/Casino and Shops on the Las Vegas Strip. This is a Fine Dining Michelin Star Rated Restaurant by Chef of the Century Joel Robuchon. The dining experience is friendly up close but casual in a classy, stylish environment. The restaurant is mostly a counter that circles the kitchen so diners are to view the kitchen wizardry. The food is prepared with all French Techniques and every dish is a masterpiece. Most of the plates are small plates……..Get ready to enjoy and Expect the unexpected everything is FORKING AMAZING!

They started us off with an amuse bouche – a Foie Gras Parfait. I didn’t try mine but I was told it was luscious and warm.

We also get a basket of amazing fresh baked breads and rich French Butter.

My first course is Smoked Salmon, Potato Waffle with Dill Whipped Cream and French Pepper (Piment d’ Espelette). They also gave me a piece of toast with fresh tomatoes and basil.

 

The salmon is so buttery and seasoned so perfect.  The potato is very flavorful. You gotta get a closer look at the painstakingly beautiful detail on the cream. Really delicious…I wish I could eat this everyday.

My husband’s first course was Iberico De Bellota Ham. This is a very special ham that comes from special Black footed pigs that eat nothing but acorns. this kind of ham is expensive. I mail away for this kind of ham sometimes for a present for my husband and it runs around $60.00 for only four ounces and it’s not as good as the ham from here because here it’s fresh sliced. I am told this ham melts in the mouth and has slight acorn to it.

Second course for me was Beet Valoute (soup) with Green Mustard SORBET and salad.

It’s not like anything I ever had before. The flavors go together like magic. Beets, a little richness and laced with a pleasing amount of mustard. I hate to use this word over and over again but it’s amazing.

Second course for my husband was Red Snapper Carpaccio with lemon Gelee, French Pepper and Turmeric Vinaigrette. I didn’t try this dish today but I had it before….It’s as great as it looks.

Dinner for me was the Yuzu Caramelized Salmon with Sriracha Aioli,  Japanese Nameko  Mushrooms and the Famous Joel Robuchon Potatoes. (this is considered a large plate)

My plate is very detailed and stunning. It’s almost to beautiful to eat and looks like it should hang on a wall in a museum. I don’t know how they make the tiny onion rings so flavorful. The small Nameko Mushrooms are also unique and have a strong mushroom flavor. The fish is so succulent, buttery and lucious and has a caramelized wonderful citrusy flavor from the Yuzu. The potatoes are magical………..so buttery and rich….no other potatoes are like these. This dinner is sooooooo fine, it’s superb!

My husband is open to try most things and goes for the Veal Sweet Bread with Bay leaves and Stuffed Romaine. He had an interest in Sweet Bread and thought if he is ever going to try it he must try the best. After trying it he said to me that I would really enjoy it if I tried it. For now I’ll just have to take his word on that.

We split our dessert courses and went for a cheese plate and the Les Tarts.

Assorted Cheeses, some were very stinky (in a good way). Never had raisins on the vine before. All the flavors were interesting and yummy!

Just heavenly and certainly WORTH A FORK!

Then they gave us an extra little treat….

Tiny bite size things like tastiest crumpets filled with raspberries ……so melt in the mouth delicious! Just Fabulous!

A sweet ending to the most incredible meal ever! Surprisingly reasonably priced for the quality it is. The 2017 pricing for three courses is less than $100.00 a person.

Worth a Fork! You’d drive 4 hours or hop a plane to dine here. If you truly do enjoy fine food you should dine here.

Gordon Ramsey Burger Las Vegas NV – Worth a Fork

 

Gordon Ramsay Burger is located in Planet Hollywood on the Las Vegas Strip. This restaurant has had a logo and name change as it opened a few years back as Burgr. This is a casual restaurant with a full bar and wait service. This restaurant specializes in Burgers. They also serve appetizers, snacks, milkshakes and a few other items. There is always a wait to get in and the atmosphere is loud and energetic and sort of fiery.

Our waiters were very friendly and excited about the menu and offered to answer any questions we had. We asked for a wine list and it was computerized.

We decided to start things out with the Truffle Parmesan Fries that were served with truffle aioli and a house made ketchup that tasted heavy with a worcestershire kind of taste.

The portion is very large but the fries are really great. The interiors are very creamy and soft but the fries aren’t soggy. The top fries taste the best because as you go down the salt collects and they get saltier.

Soon I receive my Tandoori Chicken Burger ( with the feta on the side).

The chicken is really different and I’m sorry I didn’t ask about it. It’s has a well seasoned exterior and is extremely moist and flavorful. The meat almost seems chopped.

Whatever they did it is really delicious. The Tandoori Chicken Burger is dressed with Tabbouleh, Tahini Vinaigrette, bitter Frisee, Mint Vinaigrette, seasonings and Feta. All together it’s pretty darn amazing! The rich roll is also grilled and is very tasty.

My husband went with the Hell’s Kitchen Burger with the jalapeño aioli on the side.

The beef is fresh ground daily in the main Paris Kitchen. The burger is 7 ounces and is adorned with Asadero Cheese, Roasted Jalapeño, Roasted Tomato and Jalapeño Aioli. I didn’t try it but I was told the burger was very flavorful.

They serve a “Hell” of a Burger here!

Chica Restaurant Las Vegas NV – Worth a Fork

 

Chica is located in the Venetian Hotel/Casino and Shops on the Las Vegas Strip. The exact location is off the casino floor on what they call restaurant row. The menu at Chica was created by Celebrity Chef Lorena Garcia. The food is her spin on Classic Latin Dishes. My photos don’t do justice on the restaurant’s atmosphere but here is what I got.

We were seated near the open kitchen by the Rotisserie Chickens spinning around. The aroma from the spinning marinated chickens was intoxicating.

The other end of the restaurant looked like this from my seat. Off to the sides that I couldn’t photo the place has more colors with interesting pictures and colorful pillows.

We started with a Wild Mushroom Quesadilla. It was filled with wild mushrooms, Oaxacan and blue cheeses, huitlacoche, jalapeño pesto and pickled onions. The quesadilla quarters were served stacked and were cleverly held together with guacamole. It was a tasty and interesting start to our meal.

Our server brought us some delicious Arepas to try with Argentinean Butter and a dusting of a fruity mildly spicy pepper. I don’t think everyone gets these ?………Our waitress told us the Chef gave us them because we mentioned that we picked this restaurant because we were a fan of Chef Garcia.

I’ve only had arepas a few times before but these certainly were the best I’ve ever had with yummy bells and whistles. They were fresh hot and flavorful. A yummy treat!

I had to order the half Meyer Lemon Marinated Rotisserie Chicken because the aroma was speaking to my stomach.

The Chicken was INCREDIBLY Moist and Flavorful and delicious! Even the breast almost fell apart from moisture. The herby chimichurri was a nice accent. The Potato Salad made with Peruvian Purple Potatoes and Hearts of Palm was wildly flavorful with cilantro and spicy with jalapeño. It had the right amount of cream to cut the heat.

My husband went with the Porchetta with Crispy Yucca Hash.

Slow roasted tender and flavorful Porchetta. The Crispy yucca hash also contained crispy brussels sprouts and pearl onion escabeche that accented the succulent pork and didn’t cover it up. Everything was well cooked and well seasoned. It was enjoyed very much!

I was pretty full so I passed on dessert but the waitress surprised us with an elegant little chocolate and espresso layer cake resting in raspberry sauce.

The Food was great! I felt like I was treated like a VIP maybe because I said I was a fan of the chef or maybe because they caught me snapping some photos…I don’t know…but I enjoyed and I had a great time.

Estiatorio Milos is a Fine Greek Seafood Restaurant in the Cosmopolitan Casino/Hotel and Shops on the Las Vegas Strip. The Seafood is flown in daily and everything they serve is Greek. They happen to offer a “Killer Lunch Deal” on fine seafood. The 2017 price is only $29.00 for a three course lunch with several options. The atmosphere is modern, airy, stylish and crisp.

 

On your way to the table you get to see the fish and produce.

Soon after we got seated they served us a generous basket of fresh baked bread and quality Greek Olive Oil.

For my first course I picked the Greek Spreads. Tarama (fish roe dip), Hummus, Htipiti (Feta/Tomato dip) and Raw Vegetables. All the dips were tasty but my favorite was the Feta Tomato dip.

My husband had the Shetland Island Organic Salmon Tartare with Fresno Chili, Shallots and Cilantro.

My Main Course was the Dorade Royal Grilled Mediterranean Sea Bream.

Wow! The fish is so fresh and prepared so perfect! It’s just amazing! The fish is seasoned just so and melts in my mouth! This is as good as it gets for fish. You can pay $100.00 for 3 ounces of fish this fine at certain high end Fish Restaurants…….. Thrilled!

My husband got the Shrimp Saganaki with cous cous tomato and feta.

The Shrimp were prepared to perfection. The sauce was delicious! Just a really great plate.

We both decided to try the Karidopita with Kaimaki Ice-Cream (Greek Walnut Cake with Greek Ice-Cream).

Everyone was waiting on us were great. The food was incredible. We enjoyed ourselves!
