My 2nd Patio Dining Out During The CoronaVirus Pandemic – Cucina Tagliani Glendale AZ #UpperWestSide – Healthy options and comfortable patio

Nothing is for certain. Leaving your house can be deadly during a pandemic. You can never know if you are careful enough to avoid catching the coronavirus. For me it is far too dangerous to dine in with others. I feel somewhat comfortable with take out because I wear a filtered mask and eye goggles (my onion goggles that don’t look too bad) I feel that I am 80% safe and won’t fully catch the virus protected that much. Some scientist believe with distancing that you won’t catch enough of the coronavirus in outside air to be deadly. With that information I feel less risk dining outside. This past Saturday the temperature wasn’t too high for Phoenix so we took a chance and dined out on the Cucina Tagliani Patio in. This is an American Italian Restaurant that offers most of your usual American Italian favorites and also several healthy options and lots of vegetable choices. I don’t know of any other restaurant that offers around a dozen different vegetables that you can add to a meal or have on the side.

Today I ordered a Caesar salad with salmon and added on artichokes and pine nuts.

Got a decent piece of salmon and it’s prepared reasonably well. The greens are fresh and the dressing is house made. I guess they forgot the croutons but I don’t need them anyway because there’s complimentary garlic toasts on the table. Oh did I mention that the patio is officially dog friendly?

My husband got the spicy rigatoni with added sausage.

I think they gave him extra sausage?……….Well that was nice.

I can’t believe how quiet the patio is today.

We were the only ones dining here at lunch.

We’ve been coming to Cucina Tagliani for years. It’s close to home, I like the healthy options, my husband likes the American Italian food and we enjoy the comfortable patio with misters and funny old fashioned Italian music that fills the air here.

Louie is no longer with us but was a big fan of Cucina Tagliani.

Some of the FOOD THAT MATTERS in Metro Phoenix that I Enjoyed!

I thought I’d feature some of my favorite Caribbean, Ethiopian and Southern American Food that I’ve tried in Metro Phoenix. I do note that I haven’t been everywhere so there are many other great places out there. These are just some of my favorites that I enjoyed most.

I have to start out with Desert Island Eatery in North Phoenix because they served me the very best Jerk Chicken and Curry Chicken that I have ever tried anywhere. (that includes one place in the Caribbean too!)

It’s the best! So flavorful…..So Delicious! Just falling off the bone and full of flavors…..Just the BEST!

I also enjoyed Caribbean Cuisine in Glendale a number of times and everything I tried there was delicious.

I also liked how they had some fish dishes that were different to me. I really enjoyed this escovitich fish. It’s a mild white fish that seemed like it was marinated with herbs and spices and maybe vinegar and seemed lightly fried. The rest of the plate was scrumptious too.

My husband always liked the oxtail here but sometimes it’s not available due to it takes many hours to prepare.

I’ve tried Ethiopian Food from various food festivals that I enjoyed but made the trip to Abyssinia Restaurant and Cafe in Phoenix.

Here we got our own mini buffet of many things. One of the BEST chicken dishes I tasted in Metro Phoenix has to be this Doro Wat in the middle of the platter. Everything was delicious here but that doro wat was really special.

Hot Chicken Sandwich

Mingo’s Louisiana Kitchen now operates from a food truck. They serve New Orleans Cajun type foods like po boys, red beans and rice, jambalaya and more. I had this (I think it was called Louisiana Style Hot Chicken?) sandwich. It wasn’t like other hot chicken sandwiches but it was uniquely delicious.

My husband enjoyed a shrimp po boy and an andouille sausage dish.

There’s also a modern southern American restaurant in downtown Phoenix that serves many FORKING AMAZING DISHES called The Larder and The Delta.

I had two different dishes there that were among THE BEST I’ve tried anywhere.

One dish was the Hoppin John.

It’s made of Sea Island field peas, Carolina gold rice and herb salad. It taste earthy, a little spicy, it’s deeply flavorful with interesting textures and crispy rice. It’s insanely delicious. You won’t be able to put your fork down till it’s down.

This next dish isn’t often on the menu but should be.

The K. F. C. Sandwich a mildly spicy fried chicken thigh sandwich with slaw and pickles.

I’m not sure what K. F. C. stands for here but it taste like it might mean Kentucky Forking Crack Sandwich. It was made of that special seldom found AMAZING MOUTH WATERING JUICY SUPER NATURAL DELICIOUS CHICKEN. It was THE BEST Chicken Sandwich I’ve ever tasted. It just could not be more delicious. The combination of the perfect not too big, the delicious slaw, amazing thick pickles and that oh so wonderful chicken was a taste bomb of deliciousness! I love great chicken sandwiches and there are a few of the super great chicken sandwiches out there but this is the first one that actually taste like the chicken was still on the bone. That perfect juicy chicken enhanced with delicious spices, flavors and textures. It just doesn’t get any better than that.

Make your Deviled Eggs Rosy

I discovered that it looks prettier to make deviled eggs into roses. It’s not very hard to do but might require a bit of practicing. The eggs come out delicious but you need a smooth filling or the rose tip will clog. Make any smooth recipe for deviled eggs. I usually just do a basic deviled eggs with Amora brand dijon and dust them with French red pepper. I suggest to season the egg white slightly too with a little bit of crushed sea salt and whatever pepper or paprika you like. Below is a cream cheese rose but the method is the same for just about any kind of rose you want to make.

First you need a rose tip.

Both tips are for roses but I used the bigger #104 Wilton Brand Tip

Then you insert tip (with out without a coupler) and fold down pastry bag and stuff.

Twist bag and push down filling to hold in filling and twist again. The shorter end of tip is away from you when you decorate.

Then you make a little mountain or Hershey Kiss size drop on a rose nail.

needed to use apple so I’d have a hand food my cell phone.

Then you squeeze out a little filling around the pointy tip and move the rose nail while you are squirting the little mountain.

Slightly below the tip make around three petals around the tip…

Then make at least five petals around the three but slightly lower.

Then a little lower make around seven petals. Scoop the flower off with a small spatula or butter knife.

That’s how you make a rose. Happy Decorating!

Watermelon Rind and Sweet Mango Achaar Recipe Inspired by chef Cheetie Kumar’s Recipe Green Tomato and Watermelon Rind Achaar.

I was watching chef Vivian Howard’s Food Show called Somewhere South on PBS. She visited chef Cheetie Kumar and she made this green tomato and watermelon rind achaar that sounded delicious. Last week Safeway had these watermelons for 65cents each and I had a lot of watermelon rind so I wanted to make this recipe. I didn’t have all the ingredients but I had enough to get it to taste similar. I didn’t have green tomatoes but a traditional ingredient for this recipe is green unripe mango. I didn’t have that either. But Costco dropped off a package of 6 mangos that I didn’t order so I decided I would use them here. Chef Kumar would not approve of this recipe because you must use an ingredient called mustard oil. I don’t have mustard oil and I’m not l’m not searching for it during the pandemic so I ground some mustard seeds instead. My recipe is very different from chef Kumar’s recipe but it did come out amazing and I did use the majority of her seasonings. I also note that my idea of serving size may differ from your idea of serving size.

Ingredients for around 8 servings

1 watermelon rind – green removed and cut in planks (around 3 lbs)

1/4.cup kosher salt + water to brine watermelon rinds

6 mangos (I used yellow) skin and seeds removed and cut in planks

1 teaspoon kosher salt – to salt mangos

1/2 cup white vinegar

1/2 cup apple cider vinegar

1/2 cup sugar

4 Tablespoons canola oil

1/2 teaspoon yellow mustard seeds

1/2 teaspoon fenugreek seeds

2 teaspoons nigella seeds ( also known as black cumin)

1 Tablespoon fennel seeds

2 teaspoons ground turmeric

1/4 teaspoon cayenne powder

2 oz white sugar

1 oz turbinado sugar

1 teaspoon salt (or to taste)

1/4 cup white vinager

Directions

Toss the watermelon rinds with 1/4 cup kosher salt and place in a colander and put in the refrigerator for at least 4 hours.

Toss the mango with 1 teaspoon kosher salt and place in either a bowl or quart ziplock bag and let sit in the refrigerator along with the watermelon rind for four hours.

After 4 hours drain and rinse the watermelon rinds and just drain the mango and keep to the side.

Boil the watermelon rinds in water for 5 minutes and rinse and drain watermelon rinds again.

Combine vinegars and sugar. Bring to boil and then reduce to simmer. Add rinds and cook till rinds are clear. Remove from heat and drain and discard liquid.

Grind your spices together and then mix with the three ounces of sugar and one teaspoon salt.

In a wok or deep skillet heat up oil toll it’s hot and add the spices mixed with the sugar and salt. Mix well till fragrant. Add the rinds and mix well. Add the vinegar and let it boil a few minutes and then shut off heat and fold in the mango.

It’s delicious and full of flavors you will love it!

Angelina’s Pho & Grill – Lemongrass Vietnamese Bistro – VERY GOOD Modern Vietnamese Food Glendale AZ #UpperWestSide and my take out

Angelina’s Pho & Grill is a modern Vietnamese Restaurant that is always changing. The decor changes often. The menus change about every several weeks. Now even the name might be changing according to Lemongrass Vietnamese Bistro according to their Facebook Page and latest menu.

But one thing doesn’t change and it’s the pho that is painstakingly made with a 24 hour broth. The pho here made a top pho list of metro Phoenix from the Arizona Republic Newspaper.

A few years ago they added sushi to the sign out front. Periodically some sushi has made it to the menu but I haven’t seen sushi here in a while.

The chairs, the wall color and decorative accents have changed a number of times over the past few years.

I must have been here well over 20 times and every time I visit I see a new menu.

From my last dine in visit only days before Angelina’s closed due to the pandemic is next.

Yum this new appetizer sounds delicious! Miso lemongrass Chicken Tots with Cabbage. We order it to start with.

Soon our dinners arrive. My husband said to the waiter that he might as well take the appetizer off our bill since we didn’t get it. The waiter replied that he forgot to order it so it wasn’t on the bill anyway… 🙁 I hate to be overly honest but I do have to tell THE FORKING TRUTH….Service can be very poor here at times…Often someone takes our order and never comes back. It’s rare that a server here will ask if you want a beverage. Usually they just drop off water and run. I don’t think anyone has ever re-filled a beverage here. Usually nobody clears your plates. They put in a nice dessert case a few years ago. Not once has anyone asked if I’d like to order dessert. I come back only because the food is very good and very reasonably priced. (on my take out visit I didn’t notice the dessert case)

Tonight I tried the Spicy Chicken Pho in Coconut Broth Special $11.00.

WOW IT’S SCRUMPTIOUS DELICIOUS!

It is spicy but not too spicy. It has this perfect acidity to it with a delicious twenty four hour chicken laced coconut broth. There are large slices of chicken breast in the soup with lots of long rice noodles. I added some Thai Basil, Bean Sprouts and one lime wedge to the pho. WOW really delicious!

My husband had the #18 pho.

This one is called beef hue style bun bo hue $10.00. It’s beef shank, pork rolled in banana leaf, with smooth thick noodles and Thai Mint in spicy 24 hour beef broth.

Angelina’s Pho and Grill did close during the pandemic and newly reopened only a week ago. I did take out since I don’t feel comfortable yet dining in but I would consider patio dining if it isn’t too hot in temperature because there is less virus risk outside in the open air. To walk into the restaurant I wore a mask with a five layer filter and shielded my eyes with onion goggles because some scientist believe you can catch the virus by your eyes. I also used Angelina’s (or is it Lemongrass) hand sanitizer. Nothing is for certain and this still is a risk.

Here’s my take out.

On the left is my husband’s three rice plate (shrimp, chicken, beef) and I got the yellow chicken curry. The flavors in the curry are very brilliant and delicious. It’s ULTRA flavorful. I’ve had it here before here a few times. They always add lots of vegetables that nobody else adds like cauliflower (and today some cucumber) The chicken is so tender it’s falling apart. I LOVE how so much Thai basil is penetrated into the flavors.

Vegetarian Cabbage Borscht Recipe

I came across a jarred version of Hungarian Borscht by Gold’s on the internet. It’s different and is made of the usual soup vegetables, beets, cabbage and spicy paprika. I thought that sounds delicious and I happen to have beets and cabbage that I have to use up so I wanted to make it. I looked for recipes for Hungarian Borscht and came across many other varieties of borscht. There is Russian Borscht with cabbage, beets, potatoes, caraway seed, dill and sour cream, Another is Jewish Borscht that is cabbage, beets, tomatoes, short ribs and is sweet and sour. There is also meatless Polish Borscht that is made with a lot of mushrooms. Another is Mennonite Borscht that is made with a beef base and carrots, potatoes, beets, cabbage, tomatoes, allspice, star anise and heavy cream. I thought the Hungarian Style sounded like what I wanted to do today. I didn’t have recipe and winged it off the ingredients from The Gold’s Jar of Hungarian Borscht I saw on the internet. It came out FORKING DELICIOUS! It’s a hearty vegetable stew. It’s delicious and zippy…not as spicy as you might think. I didn’t call it Hungarian because I made up this recipe from just reading the ingredients from a jarred product. My idea of serving size may differ from your idea of serving size. To me this makes around 6 medium sized bowls.

Ingredients for around 6 servings.

2 carrots – peeled, diced

2 celery ribs – diced

1/2 large sweet onion – diced

1 hot Hungarian pepper – fine chopped (they sell them at Asiana Market I buy them and keep in freezer for when I need them..very hot but delicious)

1 lb beets – peeled, diced

5 oz tomato – diced

2 Tablespoons canola oil

1 teaspoon sea salt

1/2 teaspoon ground black pepper

3 garlic cloves – ground to paste or microplane

6 oz tomato paste (one small can)

5 cups vegetable stock

1 Tablespoon + 2 teaspoons Hungarian paprika

2 teaspoons hot paprika

2 Tablespoons apple cider vinegar

1/2 small cabbage – sliced extra thin on a mandolin (I used green but either is fine)

salt and pepper to taste

Directions

In a large pot on medium high heat add the oil. When the oil is hot add the carrots, celery, onion, Hungarian pepper, beets, tomato, sea salt and black pepper. Stir well and cover pot and cook till vegetables or fork tender (around 9 minutes depending on dice size…timing may differ).

Remove cover and add the garlic. Mix well. In the center of the vegetables make an empty spot. In the empty spot add the tomato paste and stir it up bit to cook it up for a minute or two. Then mix it all up and add the vegetable stock and mix well. Add the paprikas and let this simmer around 10 minutes.

Next add the cabbage. Stir it around. Add the vinegar. Let this simmer around 20 minutes. Add salt and pepper to taste. A dap of sour cream or a hard boiled egg is optional.

Bomba Brisket Meatballs Recipe

These meatballs were made from a whole brisket where we trimmed off a lot of the fat and ground the beef ourselves. The meatballs came out flavorful but not too spicy just flavorful. They are moist but not mushy. I was told that they are very good! My idea of serving size will differ from your idea of serving size. With a small size scooper this made 76 and two mini taster meatballs. So that makes 15 or more servings (15-20) depending on how many you eat at a time and the size that you make the balls.

3 lbs ground brisket (preferably on the lean side)

1 large sweet onion – minced

1 Tablespoon bomba (Calabrian Italian hot pepper condiment)

1/2 cup parsley leaves

6 garlic cloves – ground to paste or microplane

1 Tablespoon ground black pepper

4 Tablespoons vegetable base (adds flavor and lowers the salt content)

6 eggs – beaten

8 oz whole wheat panko (Japanese bread crumbs that are lighter and airier)

3 Tablespoons dried basil

1 Tablespoon dried thyme

2 teaspoons dried marjoram

1/4 teaspoon ground white pepper

1 1/2 teaspoon sea salt

4 Tablespoons water ********YOU MIGHT NEED LESS OR MORE depending on how the beef looks…my meat was very lean and I guessed 4 Tablespoons…and it was right. Don’t add too much or they will come out mushy. If you don’t know if you need water do your tester meat ball now (before you add water and see if it is too dry. If you add water add two tablespoons and do another tester meatball….so you can guess better.

Set oven to 350 degrees F and spray some baking sheets with non stick spray and set to the side.

In a large mixing bowl add EVERYTHING except for the meat and mix well.

Now mix in the beef till it’s all incorporated.

Do a tester 1/2 size meatball in the oven. It will be done in 6-7 minutes. Let it cool and taste it. Decide if it needs a little more moisture. Add maybe 2 tablespoons water and taste again. Add only 2 Tablespoons more water at a time till you like the meatballs. Use a small scooper and space the meatballs slightly.

Fill up the oven and they will be done in around 15 minutes if you used the small scooper.

Serve with your favorite tomato sauce or the winter tomato sauce recipe from The Forking Truth.

First Dining Out During The CoronaVirus Pandemic – Patio Dining at Confluence in Carefree AZ

Nothing is for certain and there is always a risk of catching the coronavirus when you leave your house. I’m not a scientist but some scientist think that it is unlikely that you will catch the coronavirus outside with distancing. I’m not ready to do indoor dining yet but I thought I’d take a chance on the beautiful Confluence Patio and enjoy their amazing food they are known for.

I came early to try to beat the crowd and I was mostly successful. It stayed empty for most of my dining.

One side of the patio offers stunning mountain views. Tonight the weather was amazing here. It’s around 6 degrees cooler in Carefree than most oof Phoenix so with the cloud cover it was actually a cool temperature here.

Tried the four course tasting menu for the first time ($65. each).

They started us off with their amazing country loaf bread and a high quality olive oil accented with vinegar. The bread is so flavorful…….it’s impossible not to eat. I think it’s one of the most delicious breads I’ve ever ate.

Our first course were –

Aguachile – shrimp, radish, avocado, cilantro, onion ash, lime pickled red onions, cucumber, peptic and crisp yucca chips.

and

Mixed Greens Salad – chèvre, brioche croutons, sunflower seeds, pistachios and blackberry vinaigrette.

Both plates were really delicious but the aguachile had extra special fireworks going on with it and also secret ingredients not mentioned. It was explosive with flavors.

Second courses were-

Gnocchi – farm egg, pancetta, broccoli, pine nuts and pecorino

and

Wild Mushroom Soup

Wild Mushroom Soup – portobella dumplings, shallot, buttered leeks, leek oil and mushroom powder

Both plates were amazing. The soup was very silky and intense with flavors. I have no idea how each ingredient in the soup has so much flavor.

Our main plates were –

Iberico Pluma – stewed tomato, baby squash, crispy garlic, crispy caper, chick peas, pea sprouts and Calabrian Chili.

and

Arctic Char – mushrooms, English peas, fettuccini, herbs and preserved citrus butter

Both plates tasted amazing. The pork was caramelized and tender. The fish was mild and flaky. The chick peas had a special pop factor with the most contrast with flavors. The fettuccini was toothsome and had this amazing buttery taste and the peas popped with freshness.

White Macadamia Tart – caramelized white chocolate pudding, macadamia brittle, salted caramel sauce

and

Blueberry Crisp – black pepper oat crumbs, dried blueberries, lavender, creme fraiche semi freddo

WOW! Both desserts were magical.

The flavors in the macadamia were so intense and delicious.

The blueberry crisp was almost savory but also so delicious with different textures.

It was an amazing magical delicious dinner from Confluence in Carefree.

That was my first dining out during the CoronaVirus Pandemic.

Stuffed Turnips with Mushrooms – French Cooking Academy Style Recipe

I watched The French Cooking Academy Video on Stuffed Turnips with Mushrooms. The recipe seemed pretty easy to follow along with and it came out surprisingly delicious. I have to say these turnips are the most delicious turnips I’ve ever eaten. I ended up with a little extra filling that I will save for an omelet.

Ingredients for around 4 servings

1 lb turnips (4 turnips – washed, peeled and maybe slightly sliced so they are flat on the bottom or just peel them that way.

6 oz mushrooms – cleaned – chopped fine

1 shallot – peeled – chopped fine

1 cup vegetable stock (maybe slightly more if your turnips are bigger)

2 Tablespoons butter ( I used one salted and one unsalted)

2 teaspoons bread crumbs (maybe more if your turnips are bigger)

Directions

Oven needs to be set to 410 degrees F.

Hollow out the turnips.

I used a paring knife and cut a lid for each turnip and dug in with a measuring teaspoon to hollow it out. YOU NEED TO SAVE THE TURNIP INSIDES FOR THE FILLING.

Turnips need to be blanched now to remove bitterness.

They willl need 2-3 minutes depending on size.

Remove from water after blanching.

Turnip middles need to be either chopped well.

They go with a Tablespoon of butter on medium heat for around 5-6 minutes and then put to the side.

Your mushrooms and shallot needs to be chopped small just like the turnip middles. They now go in a pot on medium heat with a Tablespoon of butter for around 6-8 minutes or until all the moisture from mushrooms is gone.

The cooked turnip middles and the mushroom mixture get mixed together and stuffed into the mushrooms.

Pour a spoonful of stock into each turnip. ***(small turnip a teaspoon more if the turnip is bigger)***

Top each of the mushroom fillings with crumbs.

Put a spoonful of stock over each mushroom (again).

Pour up to a 1/2 cup of stock into the pan to steam and flavor the turnips.

Most turnips will need 25 minutes in the 410 degree F oven you can check with a toothpick, fork or knife.

Best EATS of the NINE WEEKS of Take Out Food in Metro Phoenix During The CoronaVirus Pandemic

I tried a lot of restaurants for take out during the pandemic. Most were good. Some old favorites are great for dining in but lost some of the magic with take out. But surprisingly some were GREAT beyond my expectations. Here are most but not in any particular order. One of the best take outs was from Confluence in Carefree.

This fried chicken with chilitepin honey is to die for. OMG it really is that good!

Binkley’s Dinner was pretty much over the top too!

It was the only take out dinner that felt like dining out when I ate the carefully packaged five courses.

A new restaurant that opened during the pandemic called Twist Bistro and Gallery in North Scottsdale was also AMAZING!

They gave us these delicious complimentary muffins that were moist and seemed light as air. The muffins were studded with feta cheese and were laced with dill and also came with this warm honey butter with fresh chives…….(these alone were amazing)……We enjoyed an amazing appetizer. Both our dinners were incredible.

I had the salmon and it was one of the very best salmons that I had anywhere in metro Phoenix.

The Bianco pizza (left pizza) from La Piazza Al Forno just might be the best pizza in metro Phoenix……It’s that GREAT!

The untraditional smoked corned beef sandwich special from NakedQ BBQ in Phoenix just might be the BEST corned beef in ALL of ARIZONA! It was tender like butter but the flavors were just out of bounds!

The fried chicken thigh sandwich from CHZBURGR in Glendale is CRAZY CRAZY GREAT! I’ve been told that the cheese burgers are just as great!

Desert Island Eatery in North Phoenix serves some the most DELICIOUS curry and jerk chicken.

The best tacos in town come from Taco Fusion in Glendale. All the tacos are really great but my favorite is the mild habanero chicken.

Alzohour Market serves delicious food. This time I had the chicken kabob and it is tender juicy and developed with flavors. All the food from Alzohour Market is delicious.

I may have forgotten a few and for the most part everything I took out really was good…but these are the ones that seemed the most memorable because they traveled well for take out and also were “knock it out of the park’ delicious.

Everything IS subject to change and we hope it does for the better.
