The Joy Bus Diner in Phoenix AZ is a 100% non-profit restaurant located in Phoenix Arizona. All the money taken in goes to a charity called the Joy Bus that delivers free chef created meals to cancer patients and others with serious illness. The Joy Bus Diner is More than Worth a Fork…They are making our world better…..

The Joy Bus Diner is a small casual restaurant located in a strip mall without an outdoor sign. (at the time of this review) This restaurant serves up breakfast and lunch six days a week.

The atmosphere is cheerful due to the brightly painted metal chairs and the children’s artwork that adorns the walls.

I had a power salad with added salmon.

My salad was filled with creamy ripe avocado, feta cheese, sliced almonds, quinoa lots of garbanzo beans that seemed freshly prepared, sweet small tomatoes and three rolls of smoked salmon.

My husband had the double patty melt.

It was two beef patties studded with onions, layered with cheese on lightly grilled marble rye with French Fries. They serve the patties medium-well but they stay moist because of embedded onions in the patties.

Many local business in the area donate to help fund the Joy Bus Diner. Many volunteers spend their time to keep the Joy Diner running. Your reasonably priced meal all goes to The Joy Bus Charity serving free meals to cancer patients and others with great illness that need prepared meals brought to them.

The Joy Bus Diner is Worth More than a Fork as they are making this world a better place.

My Forking Thoughts on Lay’s Chinese Szechuan Chicken Potato Chips

Lay’s Potato Chips came out with four Global Flavors of Potato Chips to snack on while your watching the Olympics. By now the olympics are over and these chips have been hard to find by me but I finally got my hands on a bag of these chips. Here is the Chinese Szechuan Chicken. These Chips are NOT vegetarian. They have chicken broth, chicken powder, and chicken fat in the ingredients.No artificial flavors or preservatives. One of the ingredients is listed as Natural Szechuan Wok TYPE Flavor

(WTFORK! is Natural Szechuan Wok “TYPE” Flavor?) These chips also actually contain Roasted Szechuan Pepper.

I am very excited to try the Lay’s Chinese Szechuan Chicken Potato Chips because I enjoy ordering it’s namesake dish out at Chinese Restaurants.

When you order Szechuan Chicken you should be prepared to taste lots of garlic and lots of fiery hot.

When you order Szechuan Chicken it usually will look something like this.

But if you go to a Chinese Restaurant that Specializes in Szechuan Cuisine the dish will look more like this.

You can tell by looking at the second photo that Szechuan Cuisine can be very fiery. This authentic style Szechuan doesn’t have a thick or sweet sauce and is fiery hot. The authentic style dish is made with mouth numbing Szechuan Peppercorns. The Szechuan Peppercorn isn’t actually hot and is actually citrus like in flavor but it numbs your mouth so you can enjoy the spicy hot peppers more.

Back to the chips…..

When I opened the bag and took a whiff….I thought it kind of smelled a little odd and sort of like a frozen Asian inspired TV dinner. Compared to other Lay’s flavored Chips I tried these are larger, very thin and most are folded. The chips are light in color but darker than plain chips. They don’t have as many green specs as in the illustration on the bag. Some chips are without specs and look plain.

I thought they’d be greasy because of the chicken fat in them but they are not. My first taste of them I get sweet, salt and spicy tingly heat and a peppery kind of taste…but not too much heat. My second chip, I didn’t just eat and sort of let it stay in my mouth and sort of sucked the flavor out……I can taste it better that way. I get Chicken flavor followed by garlic- onion – a sweetened soy sauce taste with lingering tingly heat.

As I eat a few chips I notice that some chips have stronger flavor than others. Most of the chips are mildly seasoned and the potato chip is thin and light but still taste of potato and breaks nice in the mouth.

Some of the chips do taste different… some hit me more with sweetness than others….

I conclude that they are interesting because I want to taste what the next one will taste like and I like the tingly heat.

No …these chips are not a substitute for Szechuan Chicken but the chips are interesting and sort of tasty.

These chips aren’t bad….. I’m pleased that they are not bad.

WTFork is VPN Certified Neapolitan Pizza?

VPN certified Pizza is Verace Pizza Napoletana that translates to True Neapolitan Pizza.

This kind of pizza is certified by the Italian Government to be made a certain way with certified ingredients in a certified oven. The result is an unique smaller pizza that has a puffy crust ends and has a very tender soft crust. These pizzas usually have more sauce than cheese and are usually soft and wet in the middle so they are impossible to eat by the slice and you have to eat them with a knife and fork.

There are three styles of VPN Certified Neapolitan Pizzas.

The Margarita – Tomato, Fresh Sliced Mozzarella, Fresh Basil and Extra Virgin Olive Oil

The Marinara – Tomato, Garlic, Oregano, and Extra Virgin Olive Oil

The Margarita Extra – Tomato, Mozzarella di Bufala, Fresh Basil, and Extra Virgin Olive Oil

The Certified Ingredients are –

Italian Type 0 or 00 Flour, Brewers Yeast, Water,Salt, Raw pureed San Marzano Tomatoes, Mozzarella Cheese made from Cow’s Milk, Mozzarella di Bufala made from Water Buffalo Milk, Fresh Basil, Extra Virgin Olive Oil, Water and Salt.

The ingredients are hand kneaded or slow mixed.

Baked only 60-90 seconds in a certified stone oven with an oak wood fire at somewhere around 800 degrees F.

There are only a small amount of restaurants that are VPN Certified in the United States. According to www.FornoBravo.com we only have around 15 VPN Certified Pizzerias across this whole big country. I don’t know how old that information is so I don’t know if it is accurate. We have TWO certified VPN Pizzerias in Metro Phoenix and each pizzeria has more than one location so you have many options if you are looking for VPN Certified Pizza.

I find that the crust more crusty and less pillowy and with a less wet middle than the La Piaza Al Forno. Seems like less cheese than La Piazza Al Forno.

La Piazza Al Forno started out serving Neapolitan Style pizzas for many years and only a few years back changed the recipe and oven to become VPN Certified. I know they have always made their mozzarella in-house. I don’t know if Pomo makes their own cheese.

Although both are certified VPN Pizzas the La Piazza Al Forno has different tastes and a different texture. La Piazza also is slightly less consistent with the topping and crust bottom.

Sometimes You Eat at Places that Aren’t for You.

Sometimes you eat at places that aren’t for you. Sometimes it doesn’t mean that these are bad places….It just means the food isn’t your style but might be someone else’s style.

A beautiful new casual restaurant recently opened in Scottsdale AZ called The Chicken Scoop. This is a restaurant that specializes in Chicken Salad. They offer 14 varieties of Chicken Salads in a variety of scoops and accompaniments. I love chicken and think it is the most delicious of all meats when prepared well. This restaurant seemed like a very good choice for me so I wanted to try The Chicken Scoop.

My husband and I both pick the two scoop platters. Two scoops of chicken salad, a side and a small  pudding “scoop.”

I got Buffalo Chicken salad and Spicy Thai Chicken Salad and I picked fresh fruit as my side order.

The chicken salads truly don’t taste bad. Some were more tasty than others but none of the four taste bad but the texture was soooooooooooooo off-putting to me.

It’s all smooth. No celery or onion. No chucks of chicken. It’s like you made chicken salad, remove the vegetables and just put it in a blender. They give you a basket of crackers to eat with your chicken salad but I would prefer to pay extra to get some crunch like from celery sticks or other crunchy vegetables.

I guess if I just had dental work or falling out or missing teeth this might be the first restaurant I would want to eat all. You don’t need teeth to eat the chicken salads I tried.

These smooth chicken salads just aren’t for me but I will consider this place again the next time I get dental work done.

I also ate at a Tex-Mex Restaurant that’s been on my Bucket List for a long time.

I ordered the Filet Mignon.

My Filet had nice looking grill marks but didn’t pick up any flavor from the wood grill. My husband and I both tasted the meat and both of us thought it was unseasoned. I’m not a big fan of unseasoned meat. So the steak was mine but wasn’t really for me.

Sadly I also wasn’t a fan of the mushroom and cheese enchiladas that came with my steak.The enchiladas seemed sort of dried out.  I thought the mushrooms inside were seasoned nice and were tasty but the cheese inside was next to inedible to me.

It tasted like they used processed American Cheese-like product

instead of a traditional jack or cheddar cheese or combination that most people would expect.

That plate was mine but wasn’t for me.

Went to Kale and Clover Mindful Kitchen in North Scottsdale AZ. They serve fast food style Health Focused kind of foods. I went to get my beverage and saw all the teas were flavored….(bah)…so I decided to try a strawberry kiwi green tea. The tea tasted like green tea slightly flavored water. I asked my husband to close his eyes and taste it.

He said,

“This just taste like water with something in it.”

That’s the Forking Truth! It just tasted like water with a tiny bit of green tea  in it.

I got my salad.

It’s an attractive salad made with several nice ingredients but the salad was very dry and chicken in the salad was tasteless. I guess most people would be thrilled with this salad but it wasn’t for me.

My husband had their Jambalaya Bowl.

He said the turkey sausage in it was delicious but he also said the sauce around the rice was too salty and smokey for him.

My husband normally likes very salty foods so it’s very unusual for him to complain about too much salt. It must have been a salt bomb.

He was upset that I picked this place for lunch.

He also left half his food there and never does that.

This place wasn’t for either for us.

I do note I don’t know if my experience is typical of these restaurants since my written thoughts here are only based on first impressions.

Oh well…….doesn’t mean that these places are bad……Just not for me…. I’ll do forking better next time.

There is Lots of Recalls Out There that are Hazardous to your Health

When you purchase any food that is packaged most of the time you will be ok with your purchase. However from time to time things do happen in the factory or elsewhere and you are taking a chance suffering illness or worst. You need to be aware that there are a lot of recalls out there that are hazardous to your health.

We all hear all the warnings on the evening news often about packaged foods containing Listeria, Salmonella and E Coli. We hear it so often that most of the time we don’t even pay attention.

I was surprised to find out that so many foods were recalled over the past two months for Listeria, Salmonella and E Coli.

In my own Kitchen Cabinet is Ground Turmeric that is currently recalled for elevated levels of Lead.

The Discovery Lounge at the Boulders of Carefree AZ makes one Forking Great Sandwich

The Discovery Lounge is one of several restaurants located in The Boulders Resort in Carefree Arizona. I found out about one special sandwich I had to try so we ventured out to Cave Creek today. The drive to the main building where the Discovery lounge is takes a few minute drive threw the breathtaking desert scenery and a lovey pond near the entrance.

We soon find the Discovery Lounge in the main building.

The Discovery lounge is a large very open room with a fireplace and floor to ceiling windows that show the breathtaking Boulders.

We looked at the menu and decided to split the Baja Fish Tacos and the signature sandwich named “The Bobby Slayer” Steak Torta. The Chef from the Boulders competed on a FoodNetwork TV Show and was victorious with “The Bobby Slayer” Steak Torta against celebrity Chef Bobby Flay so this was a must try sandwich!

“The Bobby Slayer” is very large in size and is filled with mouthwatering, melt in your mouth skirt steak that is a thunderstorm of flavors that lightening strike in your mouth, and then it only get better….with……Oaxacan Chiles, Crispy Chicken Skin, Avocado Creama and Cabbage makes the party complete. I very rarely will eat chicken skin but it was done in a way where I can eat it and added a delicious something different to this amazing sandwich. This sandwich isn’t for the faint of heart,children or first dates. This sandwich is powerfully flavorful, spicy but not too spicy, full of juice. It’s just FORKING Delicious! I just didn’t want this party to end. House made potato chips are included that are whisper thin, crisp and SEEM as if they are grease and calorie free.

As for the Baja Fish Tacos………The fresh grilled lime was a nice touch and I loved that quality fish called Ling Cod was used in the dish but flavor wise these tacos were very one note. These  tacos contained nicely grilled fish over plain cabbage with some Cotija Cheese sprinkled on. Room temperature flour tortillas held them together and a smokey spiced mayonnaise was served on the side but it wasn’t enough to  give them a taco taste. Perhaps if the cabbage had a vinaigrette with an herb like cilantro? or maybe some sort of tomato or fruit salsa was included the taste factor would have been elevated.

Service was good and that ……….

“Bobby Flay Slayer” Sandwich was Forking Great!

You might travel across town to dine here. Extensive Wine List, Famous Stetson Salad and Mushroom Pan Fry and more in the Touristy Arts District

You would travel travel across town for the atmosphere and The “Bobby Slayer” Sandwich. I don’t forking know about the rest at this time.

I do note this review is only based on one visit. The Bobby Slayer Skirt Steak Sandwich was FORKING Delicious. The menu is limited and I WARN YOU I don’t know if anything else on the menu comes close.

Forking Thoughts about Lay’s Kettle Cooked Indian Tikka Masala Potato Chips

Lay’s has four Global Flavors of Potato Chips out. the one flavor I tried so far is the Kettle Cooked Indian Tikka Masala.

Well lets see how it goes………

On the bag it reads that this bag is packed with flavors including Turmeric, Cumin and Tomato. It also reads on the bag that there are no artificial flavors or preservatives and this flavor is vegetarian unlike some of the other flavors.

When I open the bag I take a whiff and it smells a little bit like food.

The chips are small, very hard and folded up a bit with spices that you can see. The surface is slightly powdery.

I start tasting chips……..

It has some zip to it meaning I get heat. The chips aren’t too spicy but they have a nice heat level.

As for flavor the chips don’t remind me of Tikka Masala.

The flavors are out of balance and some flavors of Tikka Masala aren’t there.

The chips have a lot of tang and salt to them.

ODDLY I don’t get any potato taste. The chips are thin, hard and very crisp and are just hard without potato taste. Tasteless potatoes.

For me the chips lack the fragrant flavors in Indian Food. I don’t get any ginger, nutmeg, turmeric or cardamon or the creamy tomato taste. All those flavors are missing.

I’m left with tang, a sour cream kind of taste, too much something that is very similar to sticking your tongue into straight chile powder-mixed with onions and burnt toast, salt, tasteless potatoes, and cumin, coriander and heat.

Your opinion may differ.

Sadly this one is not a keeper for me.

When you go out to eat hopefully the food will be good enough to inspire you to cook up something similar. These are all recipes that I posted on TheForkingTruth.com A few of my inspirations came from the wonderful inspiring FnB Restaurant of Scottsdale AZ. When I tasted their dish of Spaghetti Squash with Harissa and Feta I knew I had to sort of copy it. I didn’t use feta cheese but did come up with a Harissa recipe that’s insanely delicious with spaghetti squash.

Another FnB inspired dish is the Twice cooked Gilfeather Rutabaga. My topping taste similar but is much lighter in fat than the wonderful creme fraiche and ginger that FnB served. Instead I used a combination of Fat Free Greek Yogurt thickened with a little whipped cream cheese and seasoned with fresh grated ginger, scallions and hit with salt and pepper. It’s pretty simple but I never would have thought up this one on my own but I did enjoy adding the crisp lotus root chip.

Eddie’s House of Scottsdale AZ starts you off with a complimentary basket of bread that includes flatbreads with blue cheese butter topped with pistou. It’s just scrumptious and I had to try my spin on it.

All the food from Deseo Latin Kitchen of Scottsdale was truly Amazing but the side dish of Red Lentils was very memorable so much that I did my spin on that one too. The original had a vegetable soup kind of taste with tomatoes, greens, dates, almonds and some sort of Latin Cheese. It was delicious and easy to replicate something sort of similar.

At Mayuri Palace of Phoenix AZ I tasted the very best Okra I ever had. I didn’t fry up Okra for this dish but I thought a similar dish with green beans and chickpeas would be delicious!

One of the most delicious Potato Salads I tried was served with my Steak at Carvalho’s Brazilian Kitchen in Scottsdale AZ. The potato salad was unlike any I had before. It was almost like mashed potatoes and chunks of potatoes. The salad had a bunch of soft carrots in it that lightened it up. I liked the pop of olives in it and as a nod to Brazilian style food I added palm to the salad that added another flavor and texture. It really came out Forking delicious.

All my life I thought Tomato Pie was something similar to the picture above. It’s fluffy thick pizza-like crust topped with a thick tomato sauce.

These kind of pies aren’t popular in Arizona but some people make them.

I remember I use to enjoy the Tomato Pie from Cafe Riviera in Bensalem PA located in Neshaminy Mall. I was searching for pictures of their tomato pie that I used to enjoy and found out some sad and disturbing news.

According to The Midweek Wire after being in business for over 36 years Cafe Riviera’s lease was lost. Neshaminy mall offered Cafe Riviera another spot in the mall but the owners didn’t agree on that spot in time to get it and Cafe Riviera shuttered February 14th 2016. This restaurant was a favorite for many and for over 36 years and was loved so much that over 10,000 people petitioned the mall with hopes to let Cafe Riviera to keep their spot.

Sadly I couldn’t find one picture of Cafe Riviera’s Tomato Pie on-line anywhere.

Well anyway thanks for listening to the ramble and getting back to tomato pies ………….Cafe Riviera’s Tomato Pie looked similar to the photo below.

When I first read about this pie I thought it was a joke. Then I looked it up and to my surprise I found out that Southern Style Tomato Pie is more popular than Jesus. There are hundreds of recipes on-line for this kind of Tomato Pie….

Maybe you never heard of this kind of Tomato Pie either?

It looks something like this pie from FoodNetwork by Paula Deen.

Unknown until today for me…I found out that Tomato Pie is very popular in Southern US.

It’s a flaky pie crust that’s stuffed with fresh tomatoes, sweet onions, herbs like basil and is topped with a mixture of shredded cheese like cheddar or a blend with cheddar and MAYONNAISE.

Update- You can still find Cafe Riviera on FaceBook. They are currently looking to re-open somewhere. The same owners also own Pizza Zeppoli in Neshaminy Mall Food Court.  I wasn’t able to find a photo on-line of Pizza Zeppoli’s Tomato Pie either. Their Tomato Pies really were good. I guess the people just have to eat and forking don’t stop to photo.

People in Metro Phoenix AZ are too Forking LAZY to Return Shopping Carts

It doesn’t surprise me that People in Metro Phoenix AZ are too Forking Lazy to Return Shopping Carts. Travel and Leisure Magazine listed PHOENIX AZ as the second RUDIST City in the U.S. I see examples of this almost every day. Besides people who don’t return shopping carts I notice car drivers don’t slow when they see pedestrians instead they speed up. Not all but some bicyclist use the sidewalks also not slowing or stopping for pedestrians instead of using bike lanes like they should. Everyday I have to jump off a sidewalk when I’m with my dog. NOT ALL!…. but many people in Phoenix really are rude! I don’t know why but I think it’s the heat that makes people different here. You also sure don’t hear the beautiful warbling of birds here like you hear back east maybe because even the birds are cranky and just squawk. I guess people are the same. People in Arizona are rude and maybe cranky too.

My least favorite thing about shopping is parking. Where can I park where someone won’t plant a forking shopping cart by my car? Every forking time I go grocery shopping or to a store I see someone too lazy to return a shopping cart. I understand that for the elderly or handicapped it might be too straining to return a cart but that is only a small percentage of people….UNLESS I’m at Trader Joes…yikes it’s chalk full of Sun City Seniors….but honestly I haven’t noticed much of a cart return problem at Trader Joe’s….Just every where else…ummm.

This forking “CART-HOLE” …. my term for people too lazy to return shopping carts…… is only steps away from a cart return and still left the forking cart by my car. (the white signs in photo are cart returns)

The laziness of Cart-Holes in metro Phoenix AZ is polarizing. I’d be ashamed to leave a shopping cart like that. What happened to do on to others as you would like to have done to you?

I guess Cart-Holes are everywhere. I do recall before I moved here back east in Pennsylvania Not all but most of our local supermarkets had this little device attached to the carts where you needed a quarter to use a shopping cart and that paid for the lock to release so you could use the cart. You only got your quarter back if you returned your cart to the cart return by locking the cart in place thus- releasing your coin.

I often wonder why we don’t have the same sort of system here in Phoenix where it’s really needed.

Even at Pet Food Markets people are CART-Holes!

Phoenix is different. Cart-Holes is almost all you see.

Look here! TWO Forking carts on either side of the cart return. I can’t believe those people are to lazy or uncaring to return the carts when they are that FORKING CLOSE.

The one thing worst than a cart-hole is a Forking cart-hole that leaves their forking trash in the cart. They are forking cart-holes that leave their forking trash in the cart besides not putting the forking cart back.
