FORKING AMAZING MINI Bagel Recipe

I make pizza dough often and bagel dough is similar but heavier with an added secret ingredient (malt flour) You also need a stand mixer to make this dough. I thought this would come out best making the dough day one and boiling and baking the bagels day two. I don’t mean to brag but these bagels really did come out FORKING AMAZING. At the moment they are the best bagels me or my husband has tasted in all of Vegas and in all of the Phoenix area.

Ingredient for up to 50 mini bagels

Dough

2 3/4 cup 110F filtered water

2 Tablespoons honey

1 pack dry active yeast (2 1/4 teaspoons)

1 teaspoon sugar

6 3/4 cups bread flour

2 Tablespoon course sea salt

2 Tablespoons malt flour

Boiling water to start the cooking process for the bagels

add 2 Tablespoons honey

2 Tablespoons baking soda

Bagel toppings –

You also need to add sesame seeds

Poppy seeds

Everything bagel mix

non stick spray

Two day directions

Have your 110F water ready in a tub or bowl. Add the sugar, 2 T. honey and the yeast to that water and mix well and cover with a lid or plastic wrap. It need about ten minutes to make a foamy top.

In your mixer add the flour, malt flour, and salt. Use dough hook.

After water is foamy then you can add it to the flours.

The directions for my Kitchen Aid Mixer say not to use above speed number two with the dough hook so I did mine on speed number 2 for ten minutes. Depending on your brand of flour the recipe can be up to two tablespoons light or heavy with the flour or water. YOU NEED to look at the dough and decide it it needs slightly more water or more flour. The dough needs to stick together and pull away from the bowl.

Put the dough in a tub(s) or Bowl (s) and cover with lid or plastic wrap. Refrigerate over night.

DAY TWO

Cut the dough in quarters. Start with one quarter and roll it as long as your cutting board. Then cut that dough in half longways so you have two long thinner doughs and roll it smooth.

You need a couple sheet pans sprayed lightly with non stick spray.

For mini bagels you need to wrap dough around two fingers.

Then squish the ends into the dough.

Keep going.

Now you need your boiling water with the baking soda and honey added.

You also need your bagel toppings set up.

You also need to set your oven on air fry.

I boiled the bagels only maybe two minutes after they floated

Then they got dipped on both sides with seeds and back on the sprayed sheet pans t

They went in my oven set at air fry for only 10 minutes.

My first ones I made too small and were super mini. These I only wrapped around one finger.

Not perfect but they taste amazing.

Did a bit better with my 2nd batch with the dough wrapped around two fingers.

Up above are Corned Beef and Cabbage Hand Pies. For this one I just bought already brined corned beef briskets and added some spices, onion, garlic, carrots. I cooked the cabbage in the liquid from the finished corned beefs and just stuck some in those hand pies that I make every so often.

Mac-n-cheese stuffed potatoes (no recipe just bake potatoes, hallow them out, salt & pepper, stuff with macaroni and cheese…I always wing macaroni and cheese and make it different all the time depending on what cheeses I have but always try to make it with lots of American and cheddar cheese.

Crepes – mixed fruit – some with sweet cheese and others with chocolate cream

Spinach Mozzarella and Feta Crepes (sorry forgot twice to photo before wrap and after wrap)

Potato Knishes

Homemade crackers (crisp breads shaped different) with homemade hummus

Served the above with deviled eggs.

Non traditional tacos made with ground turkey and pico de gallo. Some have lightly pickled avocado on them and the others have home made Boursin type cheese on them.

Also home made crackers with sesame, poppy seeds, and sea salt that are topped with a swirl of cheese ball. (Cracker recipe is shaped different and called crisp bread under recipes)

WOW! Did these vegetable egg rolls go fast!

I did get compliments on the pickled beets with cinnamon spiced goat cheese too.

Here’s the recipe for the Thai Style Peanut sauce I served with the egg rolls. I also served spicy Chinese Mustard too.

Corn and Cranberry Corn Muffins Recipe

Was thinking a bright corn and cranberry corn muffin would be just right for this time of year so that’s what I made. I studied a few basic corn muffin recipes and changed a few things and added a few things so this is what I came up with and it’s very good. Kinda LIGHT and not too sweet and depending on your bite maybe a bit tart. I made 15 cupcake sized muffins and 24 mini muffins with this recipe. You can freeze leftovers. You can make all mini muffins or all regular sized muffins or mix them up like I did.

In a big bowl hand mix –

1 cup cornmeal

1 cup flour

1/4 cup dark brown sugar

1 Tablespoon baking powder

1/2 teaspoon course sea salt

1 cup heavy cream

1/2 cup canola oil

2 eggs – slightly beaten

1 cup fresh cranberries

1 cup cooked corn kernels

non stick spray

Directions

All the ingredients (except for the non stick spray) get hand mixed in a large bowl until mixed together.

Pre Heat Oven to 400 degrees F

Spray the muffin pans with non stick spray.

Use a small meatball scoop and scoop out batter. You need a little over 1/2 a scoop for the mini muffin pan because you only want them filled only a little more than 1/2. Ovens do differ – in my oven these only took 10 minutes.

For a regular size cup cake tray use a heaping meatball ball scoop and you also only want them filled just over 1/2. Ovens do differ – In my oven these only took 15 minutes.

Also made crispy wonton cups and filled them with chocolate covered dates and dusted the cups with cinnamon and 10x sugar. (this I just winged)

Strawberry Chocolate Mascarpone CHOCOLATE Pastry Idea Recipe The pastry recipe is based on from www.ItalianRecipeBook.com

People went NUTS over this one. I usually just make pastry cream for the pastries (called Pate A Choux……like eclair or cream puff) and top with a cherry. Due to a series of events (you know like what’s on sale) I came up with topping the pastries I made with a thin coat of chocolate, a mound of chocolate marscapone, and a lightly macerated strawberry.

For the Pate A Choux (make about 3 inch circles and space well on parchment paper. Pre heat oven 375F

285 ML water

200g flour

4 oz sweet butter

4 eggs

1/2 teaspoon sea salt

Directions

Boil butter and water and turn down to low. Slowly add flour. Cook on low heat a few minutes. Take off heat and slowly whip in eggs one at a time.

Pipe batter in 3 inch circles on parchment paper and put in preheated 375F oven until done about 30 minutes. To make harder leave in turned off oven about 10 minutes more.

Make macerated strawberries. For best results make the day before. Strawberries in a bowl with sugar and a splash of bitters. (leave this sit out for an hour and then refrigerate)

When cool enough to handle

Dip tops in melted chocolate or a combo of melted chocolate and butter.

Top THAT with some chocolate marscapone

Top with macerated strawberry

Easy Rye Rolls Recipe with Slight Update

These Rye Rolls are very easy to make as long as you have a stand mixer and the right ingredients. I think the rolls come out slightly better in my new oven when I make the dough into 16 small rolls.

Ingredients for 16 servings

2 cups + 2 Tablespoons Bread Flour

1 cup + 2 Tablespoons Dark Rye Flour

2 Tablespoons Dark Brown Sugar

1 ( heaping) Tablespoon Course Sea Salt

1 package Active Dry Yeast (2+1/4 teaspoon)

2 Tablespoons Caraway Seeds + MORE to top rolls

1+1/2 Cup (100-109 degree) water

1/2 Cup Canola Oil

semolina or corn meal (maybe 1/4 cup) just for rolls to sit on

1 beaten egg white to paint rolls for seeds to stick

caraway for tops of rolls

a few pinches Sea Salt Flakes to top rolls

Directions

In medium bowl add the 100-109 degree water and add the brown sugar and yeast. Stir it up and cover with plastic wrap. Let this sit out an hour. Use only if foamy. If not foamy your yeast is dead. Then you need new yeast. After that works out get out your stand mixer with a dough hook.

Add- flours, Course Sea Salt, Foamy Mixture, 2 T Caraway Seeds, & Canola Oil. Mix it with a fork till it’s not dry anymore and then work your mixer up to medium/high and let it mix for TEN MINUTES.

Gather your dough ball out and place it in a large bowl and cover with plastic wrap. Let this sit out at least 4 hours. After 4 hours-

Preheat your over to 425F and get tw large sheet pans and cover them with parchment paper.

Divide your dough into eights and cut each 8 in half so you have 16 pieces of dough. Roll each into a ball and space well on each pan.

Let sit out on hour and cover loosely with plastic wrap.

Each ball gets painted with egg white, sprinkled with caraway seeds and add a pinch of sea salt flakes. Slash each roll twice on the top.

Put one pan on bottom rack for about 15 minutes. Repeat.

Corned Beef & Cabbage Hand Pies Recipe Idea

I thought Corned Beef & Cabbage Hand Pies would be a good idea for a St Patrick’s Party. I bought a brined corned beef from the supermarket and boiled it adding some garlic, onion, carrots, and some leftover pastrami spice. I used the cooking liquid from the corned beef to braise the cabbage When the corned beef was cold it got sliced and some cabbage got chopped. Then I made the dough. Brushed the inside of the dough with beaten egg whites.

Filled the dough with some corned beef and cabbage. Closed the dough and brushed with egg yolks. Baked till light brown.

These went in the 350F oven for around 30 minutes.

Hand Pie Dough Recipe – Makes 12 (divide dough in 12 balls) Lines pans with parchment paper.

2 cups flour

1/2 cup canola oil

1 teaspoon apple cider vinegar

1 teaspoon course sea salt

1/3 cup water

2 egg whites for brushing and sealing the dough before stuffing it

2 egg yolks for glazing the top of hand pies.

Directions

Mix together with a fork the flour, canola, vinegar, salt, water, and baking powder.

Divide into 12 balls

Roll out ball and brush with egg white

stuff

pinch together

When done brush with yolks

Bake till light brown
