My Trip to the Dosa Grill Phoenix AZ – Vegetarian Indian Restaurant – NOW CLOSED FOR BUSINESS

******UPDATE NOW CLOSED FOR BUSINESS****Dosa Grill Indian Vegetarian Restaurant recently opened in North Phoenix AZ. Obviously they specialize in serving Dosa in many varieties. The Dosa is a South Indian crepe made from fermented rice and lentils. Dosa gets served with Chutney and Sambar (lentil stew…..a vegetable soup).

The interior is neat, clean and modern.

The menu is very long. Many appetizers, Dosas, Uthappams (thick pancakes made from dosa batter), vegetable curries, rice dishes, Thali Specials and desserts.

We receive bottled water our order was taken and in reasonable time our appetizer of Jalapeños coated in chickpea flour (Cut Mirchi) arrives.

These Jalapeños are very mild like bell peppers today…The coating is crisp and seems oil free. I’m not familiar with this particular creamy chutney. It’s very creamy and like thick hummus.

Next we share a specialty of the house…..The Special Grill Rava Dosa.

The Dosa is the laciest dosa I’ve ever had. It’s whisper thin, nicely browned and very crisp. It’s filled with onion and a small amount of mashed potatoes. This dosa is suppose to contain chili and spicy gunpowder but very little was used because we didn’t taste chili or gunpowder but it was mildly tasty anyway. Chutneys are also very mild today…..The round ramekin with sambar (vegetable soup) had the most flavor here.

We shared the Weekend Special Combo Thali.

Here was Loli (pancake), Vada (lentil doughnut), Masala Dosa (potato filled crepe), Pongal vegetable Uthappam (Indian Pizza Dosa), chutney, sambar, dessert.

Everything tasted fresh made. Nothing was strongly seasoned. Everything was mild – tasty.

If your in the mood for Vegetarian Indian Dosa that’s prepared hot and fresh and served with very mild chutneys…. then The Dosa Grill might fit your appetite.

Service today was minimal. Our order was taken and we were given bottled water. Kitchen staff ran the food to us. We weren’t asked how things were and we had to walk up to the desk to pay.

That was my trip to the Dosa Grill in Phoenix.

Low Fat Vegetarian Refried Beans Recipe

Low Fat Vegetarian Refried Beans on tostada with mixed cheese, salsa scrambled eggs, pickled jalapeño and scallions

These beans are easy to prepare but you need to soak the beans over night in the refrigerator before you start cooking them. The beans take all day to cook. After the overnight soak, beans get rinsed off and cooked with ONLY WATER till soft about two hours. DON’T even add salt or beans might not get soft……When you cook beans flavors can be added but not until they are almost done. Then the rest of the cooking happens and in 2 1/2 – 3 hours after that the beans will be done. I do warn you that the beans turn a weird muddy color when you start the last stretch of cooking but in the last hour of cooking turn the right bean color.

Ingredients for about 8 servings

1 lb dried pinto beans – soaked in a large tub of water over night in the refrigerator – Then rinsed.

6-7 cups of water (I started with 6 cups and it looked like it needed another cup 1/2 way)

6 1/2 oz sweet onion – minced

6 garlic cloves – minced

1 oz jalapeno – minced

2 Tablespoons canola oil

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon ground annatto

2 teaspoons paprika

1 teaspoon smoked paprika

1/2 teaspoon ground black pepper

1/2 teaspoon dried oregano

1 teaspoon course sea salt

Directions

Put a sauce pot medium high heat and add the canola oil. When it’s hot add the onions, garlic , jalapeño, cumin, chili powder, annatto, paprika, smoked paprika, black pepper, oregano and salt and cook till everything is soft. Add beans mix and blend with a stick blender. You will slowly reduce the heat. You have to occasionally stir the pot so the beans don’t get stuck to the bottom of pot. You want the beans to bubble a bit but not too much or they will explode all over the oven. Loosely cover half the pot with foil and eventually turn down the heat too low. I will repeat that the beans might be an offensive color but change when they are close to done. Occasionally stir the pot so beans don’t stick. The beans will be done in 2 1/2 – 3 hours.

My Forking Thoughts on trying two Vegan Impossible Burgers in Metro Phoenix Arizona

I’ve been excited to try the vegan Impossible Burger. These days I’m very selective about any ground beef that I will eat and there are no ground beef worries with the Impossible Burger.  I found that The Cuff Restaurant in Old Town Glendale now offers many Vegan items now and one is the Impossible Burger. The Impossible burger gets it’s meat like quality from something they call heme that comes from soy roots. The heme is also suppose to make the vegan burger patty bleed. Heme is also a protein that most people on a vegan diet don’t get so this burger in moderation can be beneficial to people on vegan diets.

At The Cuff you have the choice to go completely vegan with vegan cheese. I went vegetarian with real cheese that was cheddar. The burger was what I was going for here.

My burger arrived open faced and was topped with a slice of cheddar and caramelized onions. On the top bun half was mixed greens, tomato and a particularly good pickle chip. I cut my burger in half hoping for vegetable blood like on the Table tent photo.

It’s a little dry and crumbly but does have a nice sear.

It crumbles more when I break some off for my husband to try.

I put it together to try the way it’s meant to be eaten.

It’s not bad…….It’s almost like meat but with something textural wise I’m missing and more crumbly. The pickle and ketchup cover up a lot of the Impossible burger’s taste. I get a weird butter-like after taste that I’m not found of but I’m not sure if that taste comes from the cooking process of the burger, cheese or the bun. I think it taste something like margarine…..or an imitation butter.

It seemed like my Impossible Burger might have been over cooked?????

Maybe the Impossible Burger is Impossible to cook correctly?……… I don’t know?….

As luck would have it I found another Impossible Burger at PNPK in North Scottsdale so I decided to give that one a try and see if it differed any……and I was also hoping for blood….VEGETABLE Blood that is….

This impossible burger is offered as a slider. Both Impossible Burgers came with Impossible Flags on them. You have your choice of many different toppings. I tried mine with Brie and Mushrooms.

I’m going in for a bite and ……in a Vampire Voice like in a classic Bela Lugosi ….”I’m hoping for Blood…Blah Blah Blah Vegetable blood!”…….

No blood here either but this one does have juice and isn’t crumbly like the last one. It does have a texture that might be confused for meat.  This one really does feel like meat in my mouth. It’s very close to meat.  I think if I was a vegetarian I might fear that I was eating meat and be grossed out. This one taste better and I’m not getting that imitation butter flavor that the last one had…..My husband refuses to try this one after trying the last one……. He said maybe you can find some Impossible Meat at the store and make it into something better…..

I’m thinking maybe the Impossible Taco, Burrito or Meatball is next?

Vegetarian Chili with Jackfruit Beans and Corn

I thought I’d do something different with Jackfruit. Today I made a Vegetarian Chili with it. It was slightly difficult because this particular Jackfruit was much more flavorful and sweeter than any other Jackfruit I ever had before. I didn’t know they differed so much so preparing Chili was difficult with a very sweet flavorful Jackfruit but somehow I managed to do it. I also note that Jackfruits always differ. They are always made of the pulled part that looks like pulled meat. The Bulbs that are the sweeter and fruitier part and there are the seeds that are sort of edible…….The seeds are very good and taste like a cross between a bean and a chestnut but are almost impossible to peel. The peels are edible but not so enjoyable……When the seeds are still hot you can get the seed meat out but within minutes that opportunity ends so you can try or just throw them out. You don’t always get the pulled meat out of a Jackfruit. That will depend on ripeness…..*****VERY IMPORTANT******This recipe will not work out for you if you can’t get the Jackfruit meat out.*******This came out very hardy but not as meaty as the vegetarian burger recipe on this site. If you are going for really – like -meat I suggest the Vegetarian Burger recipe. I’ll come out with a more meaty-like vegetarian chili recipe next time….You won’t be hungry after a bowl of this Vegetarian Chili.

Ingredients for about 6 servings

2 lb chunk of Jackfruit – in pot. Cover with water and boil for 45 minutes

2 oz Guajillo Chile Pods – Wash first then first then Soak in about 4 cups of boiling water (*****Water needs to be saved)

2 Tablespoons tomato paste

1/2 large sweet onion chopped

2 Tablespoons canola oil

1 green bell pepper – chopped

2 teaspoons course sea salt

1/2 teaspoon ground black pepper

3 cloves garlic – shredded

1 lb seven hour reduced tomatoes – ( LIGHTLY sprinkled with olive oil salt and pepper cooked at 225 degrees for 7 hours) (( regular tomatoes and plum tomatoes need to be cored with skin removed and cut in halves….cherry tomatoes just cut in half)

40 oz can pinto beans – drained and rinsed at least three times (if you can find reduced sodium they are better)

2 chipotle peppers (from adobo) – chopped fine

1/4 cup masa

1 teaspoon cumin

2 teaspoons chili powder

1/2 teaspoon thyme

1 teaspoon smoked paprika

1/2 teaspoon granulated onion

1 teaspoon urfa pepper

1/4 teaspoon hot smoked paprika

1/4 teaspoon cayenne pepper

1/4 teaspoon ground white pepper

1/4 cup apple cider vinegar

1 Tablespoon liquid smoke

2 cups cooked corn kernels

2 cups cooked rice

1 -1/2 cup scallions – chopped (the half cup to finish)

3 oz pepper jack cheese shredded (or more) – to finish

3 oz sharp cheddar cheese shredded (or more) – to finish

6 oz corn chips or and corn tortillas – to finish

salt and pepper to taste

hot cayenne sauce to taste (Franks Red Hot is preferred)

Directions

When cool enough to handle break down the Jackfruit.

Rough chop the bulbs and set to the side.

Remove stems from guajillo chilies. Rough chop and blend them in the water.

Put to the side.

In a medium to large sauce pot add the oil and heat on medium high heat. Add the onions and bell pepper and cook till onions are translucent and peppers are soft. Reduce heat to medium. Add the tomato paste and stir well. Add the garlic salt and pepper cook till fragrant.

Add the tomatoes, beans, jackfruit bulbs, chipotle chiles and blended chilies.

Whisk in the masa.

Add cumin, chili powder, thyme, smoked paprika, granulated onion, urfa pepper, hot smoked paprika, cayenne, white pepper and stir a little and turn down to simmer. Let it simmer about 30 minutes.

Add apple cider vinegar, liquid smoke, corn and jackfruit meat. Simmer about 15 more minutes.

Add cooked rice, and scallions.

Adjust seasonings, cayenne pepper sauce and add salt and pepper to taste.

Serve with shredded cheese, corn chips and or corn tortillas and scallions.

My First Taste at Muse and Market in Phoenix AZ was Worth a Fork!****UPDATE NOW CLOSED FOR BUSINESS

****UPDATE NOW CLOSED FOR BUSINESS Muse and Market is a casual order at the counter, pay, grab a number and seat yourself. This This restaurant is a gourmet modern global, mostly vegetarian, vegan and coffee bar restaurant located in Phoenix Arizona.  Today on my visit only two plates contained meat. The restaurant is located in a large building with a parking lot called The Marilyn. At the time of this review this restaurant is still in the soft opening stage and I didn’t spot any Market items for sale.

The executive chef is Dino Luciano a past Master Chef Winner from Gordon Ramsey’s competition cooking show called Master Chef.

There is inside and outside dining. The decor is modern with a few standard tables, a few high tops and a community table.

A definition of Muse is to consider something thoughtfully……and also can mean to be a source of artistic inspiration.

The menu is interesting…….you’ll see.

They offer an Appertivo Menu with a smoking deal of three gourmet plates for $15.00 or you can order FIVE plates off the Appertino Menu for for $25. ***(at this time subject to change)

We tried Eastern Roman Papaya with pistachio, harissa, orange and mint. Not sure if it was but this dish did taste fermented to me………It ran a bit high for me with acid but might be just right for people that desire more acid in their foods.

Caprese Panzanella that contained heirloom cherry tomatoes, bocconcini cheese, garlic focaccia croutons with blood orange pesto. This dish had a safe familiar flavors that most everyone is familiar with and would enjoy.

Beet Hummus with pickled asparagus, Italian Parsley, pecorino, radish greens and charred flat bread. This is a very light VERY non-traditional hummus. It felt like silky lightly pickled beets in the mouth. It came with strongly charred flat breads.

Here’s a closer look at it all.

The servings were generous in size for two people and I packed some up for latter.

We also shared one of the two non-vegetarian plates called Slow Roasted Jalfrezi Chicken.

We received soft as butter boneless chicken in a sort of tomato mild curry type of sauce and a big skillet of miniature charred cauliflower florets, zucchini and scallions. We both enjoyed the Slow Roasted Chicken Talfrezi. The Chicken was flavorful and very tender and melted in the mouth…..It was extra yummy went I came across a surprise pop of mint. The cauliflower was dosed heavy with lime for my taste but might be just right for others.

Lastly we shared the Arancini Nero that just might be the biggest MUSE (a source of artistic inspiration) on the menu.

It was a very satisfying, delicious, hardy,  vegetarian dish of Forbidden Black Rice, Kelp, Cantharellus Mushrooms, Kobocha Squash and Porcini Ragu. This had some earthiness going on but not too strong…it was just delicious. It sure wasn’t close to traditional Arancini in anyway……

The Food is Unique Global Farm Fresh……..It’s a little Hidaway that’s special. A great choice for vegetarians, people that want to eat more health conscious or just for anyone that wants to eat something completely different.

I would say Muse and Market is Worth a Fork!

Middle Eastern Inspired Red Quinoa Salad Recipe

 

Middle Eastern Inspired Red Quinoa Salad

This Red Quinoa Salad is inspired by the Red Quinoa Salad I tried at Gordon Ramsay’s Hell’s Kitchen…..well sort of.  I started out making the salad with most of the same ingredients such as, Red Quinoa, dried apricots, hazelnuts, apple, creamy cheese and then I got the idea to flavor the salad with Urfa Biber Red Pepper…..There is not a substitute for Urfa Biber Red Pepper….It has a raisin kind of slightly smoked taste with very mild heat. It’s unique. I purchase Urfa Biber Red Pepper from the Asiana Market. It’s in the Middle Eastern Aisle. Then to make the salad more full flavored I then addd some Ras El Hanout also in the Middle Eastern Aisle.  I thought these were the perfect flavors with these ingredients. I also added some toasted black sesame seeds that go crazy well with Urfa Biber. To make the salad a little more interesting I added a little roasted till sweet cauliflower and finished the salad with a pinch of sumac. I think most people would enjoy this salad. I think it’s actually better than the salad I tasted at Hell’s Kitchen but please don’t tell……I don’t what you know who to call me a F*** Face Donkey.

Ingredients for about 6 servings

2 cups water – (for boiling the quinoa)

1 teaspoon course sea salt – to boil quinoa

1 cup red quinoa – washed really well and drained (even if it’s marked washed – always wash quinoa really well)

1/2 cup dried apricots chopped

1 honey crisp apple – peeled and chopped

1/2 cup hazelnuts – lightly crushed and toasted ( about 5 minutes in a 350 degree F oven)

1 teaspoon ras el hanout – (you can buy this at Asiana Market in the Middle Eastern Aisle)

1 1/2 teaspoons urfa biber red pepper (same area as the ras el hanout)

2 teaspoons black sesame seeds – lightly toasted

4 oz creamy mld feta that’s not tangy or salty – crumbled – …(or substitute goat cheese)

1 cup cauliflower – roasted till sweet and crisp in small florets

2 Tablespoons extra virgin olive oil – to roast cauliflower

fresh ground sea salt – to season cauliflower – to taste

fresh ground black pepper – to season cauliflower – to taste

2 tablespoons celery leaves to garnish

4 pinches sumac to finish

Directions

Set oven to 350 degrees F

Get out a sheet pan and spread the cauliflower florets out. Drizzle them well with olive oil and let them go till browned crispy and sweet. I’d check them in 30 minutes but usually they need about 45 minutes…..They always seem to differ a little  or maybe it’s my oven. When the cauliflower is done apply fresh ground sea salt and black pepper to taste.

Bring a pot of water to boil with the teaspoon of salt. Add quinoa reduce to simmer and cover loosely.

Check it after 15 minutes and add the apricots. Stir and recover. If it’s done shut off the heat and keep it going on the heat and check every five minutes and shut off when quinoa is done.

Add the apple, hazelnuts, urfa biber pepper, sesame seeds, ras el hanout

Mix and top with remaining ingredients,

Enjoy!

No Pasta Squash Manicotti Recipe

 

No Pasta Squash Manicotti

I got the idea to make this kind o Manicotti after I dined at Bottega Pizzeria Ristorante in Glendale AZ. I had a similar dish there and I knew I could make the same dish…It just so happens I recently made a batch of Cannoli and had a lot of home made fresh ricotta cheese and I happened to also have a bunch of squash…..So this is what I had to make. I don’t recommend for everyone to do this recipe for two reasons. One you might not be willing to make your own ricotta cheese and you might not care to shred your own cheese. Your own fresh ricotta cheese and grated cheeses will taste much better than ricotta and already shredded cheese you purchase from a regular grocery store so the manicotti won’t come out as good tasting without fresh made ricotta cheese. (they might also come out more runny I’m thinking and then you’ll get mad at me)……You also have to already have drained ricotta cheese so that may or may not be some extra work for you. ……..BUT……….The MAIN REASON I don’t recommend this recipe to most people is that you need to be pretty good using a mandolin to cut the long ribbons of squash. I don’t want you to go to the hospital to make Squash Manicotti… I’m thinking it might be easier to make a one layer lasagna with the squash for most people….so do that if you prefer. I also need to let you know that I wasn’t able to slice the very end of each squash either so i need to use the ends for soup or a side vegetable. This recipe make around 21 manicotti so it will be around 10 servings. Extra servings can be frozen but they are better fresh. Also after they are frozen they might need another drain.

Ingredients for about 10 servings

6 small- small /medium squash – (zucchini or yellow or a mix of both) (don’t use the very large squash here….it will be more watery from the bigger seed cavity and not come out as well. I note it is possible due to size on squash, thickness and your ability to slice squash…the amount of squash you use may differ.

4 cups of ricotta – preferably home made and drained for three days (recipe is on site for many recipes) (1/2 gallon milk, pint heavy cream, teaspoon sea salt, one lemon…that’s about how much you need for the recipe but I always make a double batch of cheese and freeze what I don’t use)

1 cup of Italian Blend Cheese  – plus extra for the amount of manicotti you are serving for topping them. – Use preferably cheese shredded by hand of a combination of mozzarella, mild and sharp provolone and parmesan (about 1 part mozzarella and the other cheeses are about one quarter)

1 large egg – beaten

1/4 teaspoon dry basil

1/8 teaspoon white pepper

few grates fresh nutmeg

1/4 cup extra virgin olive oil

fresh ground sea salt to taste…..(here you need to use the salt extra sparingly because the cheeses are salty. The salt is just to season the squash)

fresh ground black pepper to taste – black pepper is used just to season the squash

You only need about two tablespoons of sauce for each manicotti you are serving……Use your favorite sauce to top the manicotti…..Here I used Norma Sauce (a rich tomato/eggplant sauce. Recipe is on site)

Directions

Set oven to 350 degrees F. Oil baking sheet(s).

In medium bowl add the ricotta cheese, Italian Blend Cheese, egg, basil, white pepper and nutmeg. Mix and put to the side.

Remove the squash ends.

In a large bowl CAREFULLY slice the squash thinly longways on a mandolin. I did two at a time so I could figure how many squash I needed.

Lay out about 4 slices of squash and make them overlay each other like picture below.

Now you need to either spoon out a thick line of cheese or squirt a line with a pastry bag so it looks like picture below.

Wrap the left side of squash over the cheese and keep rolling.

Keep rolling and then place on oiled baking sheet and repeat till you are out of the ricotta mixture.

Sprinkle tops of manicotti with olive oil and sparingly with fresh crushed sea salt and black pepper.

Place in the 350F degree oven for 30 minutes.

You need to drain the water that came out of the squash. (some people salt squash before using in different recipes but since this squash is very delicate and thin it’s too easy to over salt)

To serve top with any pasta sauce that you enjoy and put bake in the oven a few minutes to melt Italian Blend cheese on the top. Extra manicotti can be frozen for latter use but it will be better fresh.

The Forking Awesome Veggie Burger

This is a Vegetable and Grain Burger that eats like a real burger. It isn’t mushy like most vegetable burgers. It not bland either and has flavor sort of like meat….My husband is very anti vegetable burger and even he said this one was very good. The burger is mostly a combination of shiitake mushrooms, polenta, lentils, bulgar, beets and oatmeal that’s held together with egg and whole wheat panko bread crumbs. I thought the burger would be really great with tellegio cheese and arugula. I also made a sauce of mayonnaise mixed with lots of smoked paprika, aleppo pepper, a little dijon mustard and a tiny bit of an Italian condiment called Bomba Calabrese…..Bomba is really hard to come by but it’s a really a delicious very spicy condiment that goes a really long way. It’s a FLAVOR BOMB. If you enjoy spicy foods I do recommend that you order a jar of Bomba off the internet (I like the Coluccio Brand). The sauce, tellegio cheese and arugula would be great with this Forking Awesome Veggie Burger. This burger takes a day to prepare. I made the mixture one day and left the patties to set over night.

This Forking Awesome Veggie Burger really is like a real meat burger!

 

Ingredients for about 6 servings.

4 oz shiitake mushroom caps – chopped well

2 1/2 oz. sweet onion – fine chopped

1 garlic clove – grated

1/3 cup polenta – not the instant kind

2 cups water

1/3 cup black lentils – the small type

1/3 cup bulgar

1/3 cup beets – grated

1/3 cup oatmeal (not the instant)

1 Tablespoon dry white wine

3 large eggs – beaten

2/3 cup whole wheat panko bread crumbs

1 teaspoon course sea salt

1/2 teaspoon black pepper

non stick spray – preferably canola or vegetable

fresh ground sea salt to taste

fresh ground black pepper to taste

Directions

Spray a fry pan with non stick spray. Put the pan on a medium high heat. When the pan is hot add the mushrooms and the onions. Stir occasionally. When the onions are translucent add the garlic and let it go till the contents look lightly caramelized. Then take off the heat and set to the side.

In a sauce pot add water and salt. Put the pot on medium high heat. When the water just starts to boil add the polenta …..stirring very well with a whisk. Now add the lentils, bulgur, beets, oatmeal, wine and black pepper. The mixture needs to boil but then you reduce the heat near to a simmer. You need to stir occasionally for about 20 minutes.

After 20 minutes add the mushroom mixture and keep it simmering about another 20 minutes stirring occasionally. The mixture will get very thick.

Take the mixture off the heat and let it cool to room temperature.

Once it’s at room temperature add the eggs and the panko and mix well.

Put 6 sheets of plastic wrap on your counter and make 6 patty shaped burgers and wrap them up and place to set in the refrigerator over night.

“Those burgers smell good!” “Aren’t they meat?”

 

The next day……

Set your oven to 350 degrees F.

Spray baking sheet(s) with non stick spray.

Put your burgers on the sheet and give the tops a light spray and then set the sheet pan in the oven.

At 30 minutes flip the patties over and let them go another 15 minutes. Add fresh ground sea salt and black pepper to the burgers to taste.

Ready to serve!

Eggplant Meatless Meatballs

These Eggplant Meatless Meatballs are absolutely delicious! My husband didn’t think he’d like them but admitted they are delicious.  I have to let you know that the baked eggplant balls come out a little softer than real meatballs so I recommend serving them as a side or over some sort of pasta. When you reheat them heat the eggplant balls and sauce separate.

This recipe make about 35 Eggplant Meatless Meatballs around 8 servings

2 1/2 eggplants – medium sized

6 Tablespoons extra virgin olive oil

1 Tablespoon sea salt

1 bagel – chopped well

1/2 sweet onion – chopped fine

2 garlic cloves – minced

1 cup parmigiano  reggiano – shredded

1 cup dry oatmeal (not instant)

1 XL egg – beaten

1 cup panko (bread crumbs, plain)

1/4 teaspoon red pepper flakes

1 1/2 teaspoon oregano

1/2 teaspoon basil

1/2 teaspoon thyme

1/4 cup fresh parsley – chopped

1 1/4 teaspoon kosher salt or sea salt

3/4 teaspoon black pepper

non-stick spray

Directions

Set oven to 350 degrees F.

Get a baking sheet. Peel the eggplants. (I didn’t but would peel next time) Put the eggplants in halves longways and make diagonal cuts in both directions and drizzle with extra virgin olive oil and sprinkle with sea salt.

Cover with foil and leave in your oven about 90 minutes till soft.

Chill in your refrigerator over night. Remove the eggplants and throw away the liquid that came out. Blot the eggplants dry. Now put the eggplant meat in a microwave safe bowl and cover with plastic wrap. Microwave for about 5 minutes. Leave the bowl alone and still covered for about one half hour and more liquid will come out. Drain the liquid and now you can stir the eggplant up with a fork to break it up into eggplant meat.

Now you can mix all the ingredients together in a large bowl.

Set your oven to 350 degrees F

You need a baking sheet(s) and nonstick spray.

Make a just one sample Eggplant Meatless Meatball to test for spices and texture. Let the ball cool a little before you try it. I noticed the balls do stick a little to the pan but as they cool they loosen. The Eggplant Ball needs about 12 minutes in the oven.

Now use a small scooper and make your Eggplant Meatless Meatballs. Here they are raw. Mine needed 14 minutes in the oven.

The Forking Truth – Hot Dogs-Vegetarian are NOT and Some Have Human DNA

The Forking Truth is that the Clear Foods Company released a report that analyzed ingredients at a molecular level in hot dogs and sausages. Clear Foods analyzed 345 hot dog and sausage products from 75 brands and found HUMAN DNA in 2% of the samples and forking found human DNA in 2/3rds of vegetarian samples or to be exact 67% due to hygienic issues with humans.

Clear Foods found chicken in vegetarian breakfast sausage and pork in a vegetarian hot dog.

The Examiner.com wrote in their article that if you want to avoid pork you should avoid chicken and turkey products because pork was found in 3% of the samples. Not listed on the label but used as a forking substitute.

The good news is that Clear Foods also reported no problems with a few brands of Hot Dogs. They said these hot dogs were made with integrity and were high quality.
