Strawberry Chocolate Mascarpone CHOCOLATE Pastry Idea Recipe The pastry recipe is based on from www.ItalianRecipeBook.com

People went NUTS over this one. I usually just make pastry cream for the pastries (called Pate A Choux……like eclair or cream puff) and top with a cherry. Due to a series of events (you know like what’s on sale) I came up with topping the pastries I made with a thin coat of chocolate, a mound of chocolate marscapone, and a lightly macerated strawberry.

For the Pate A Choux (make about 3 inch circles and space well on parchment paper. Pre heat oven 375F

285 ML water

200g flour

4 oz sweet butter

4 eggs

1/2 teaspoon sea salt

Directions

Boil butter and water and turn down to low. Slowly add flour. Cook on low heat a few minutes. Take off heat and slowly whip in eggs one at a time.

Pipe batter in 3 inch circles on parchment paper and put in preheated 375F oven until done about 30 minutes. To make harder leave in turned off oven about 10 minutes more.

Make macerated strawberries. For best results make the day before. Strawberries in a bowl with sugar and a splash of bitters. (leave this sit out for an hour and then refrigerate)

When cool enough to handle

Dip tops in melted chocolate or a combo of melted chocolate and butter.

Top THAT with some chocolate marscapone

Top with macerated strawberry

My Trip to China Kitchen – N Las Vegas NV – Not The Best

China Kitchen newly opened in North Las Vegas. It is an American/Chinese dine in or take out kind of restaurant. This restaurant shares a nice community patio with several other places and it was a nice day today so I wanted to try it. We did take out and sat on the patio.

Maybe the best of what we tried was the potstickers (chicken & scallion).

They are crispy all over but have little flavor.

We got free vegetable egg rolls with our purchase so we tried them.

To us they are more like spring rolls and are kinda gooey inside. (ick)

I tried the Hot Garlic Szechwaun Chicken.

The chicken is tender but doesn’t taste hot or garlicky. It taste very sweet. So sweet that you can pour it on pancakes. You can add on rice, fried rice, or noodles so I tried noodles.

It’s a very large portion. They have little flavor and are slightly over cooked and are a little gummy.

The Kung Pao Beef is hard to eat because the beef is very chewy.

My husband thought that the added on fried rice was ok.

My small dog thought that the Hot Garlic Szechwan Chicken was too sweet too!

“I can break my teeth on the Kung Pao Beef too”
“I like sweets”

That was my trip to China Kitchen. – Not the best.

My Trip to Scoundrels Tavern & Eatery – N Las Vegas NV – Very Good Salad & Not so Good Burger

Scoundrels Tavern & Eatery is a 24/7 Bar, Gaming, and Restaurant with two locations in Vegas. The North Las Vegas Location has a covered patio and the usual games and big screen TVs inside.

We decided to try the macaroni and cheese bites.

They were fried nicely and seemed free of oil. They also came with ranch dressing. They taste similar to that blue box type macaroni and cheese. (kinda artificial)

Who knew that the Thai Salad would be really good!

The chicken is warm and moist. The salad is a very generous portion and is really embellished with lots of things. There’s peanuts, mandarine oranges, zucchini strings, carrots, bean sprouts, sweet tomatoes, greens, and a sorta spicy peanut-tee dressing.

The Smokehouse Bacon Burger didn’t come out medium-rare as requested.

I was told that the cheese, onion straws, and bacon were very good…….but….The burger was dry, dense, and cooked to medium-well instead of medium-rare. The fries were also kinda hard and dry.

Good Thai Style Salad but not so good burger or macaroni and cheese bites unless you love the blue box stuff.

Easy Rye Rolls Recipe with Slight Update

These Rye Rolls are very easy to make as long as you have a stand mixer and the right ingredients. I think the rolls come out slightly better in my new oven when I make the dough into 16 small rolls.

Ingredients for 16 servings

2 cups + 2 Tablespoons Bread Flour

1 cup + 2 Tablespoons Dark Rye Flour

2 Tablespoons Dark Brown Sugar

1 ( heaping) Tablespoon Course Sea Salt

1 package Active Dry Yeast (2+1/4 teaspoon)

2 Tablespoons Caraway Seeds + MORE to top rolls

1+1/2 Cup (100-109 degree) water

1/2 Cup Canola Oil

semolina or corn meal (maybe 1/4 cup) just for rolls to sit on

1 beaten egg white to paint rolls for seeds to stick

caraway for tops of rolls

a few pinches Sea Salt Flakes to top rolls

Directions

In medium bowl add the 100-109 degree water and add the brown sugar and yeast. Stir it up and cover with plastic wrap. Let this sit out an hour. Use only if foamy. If not foamy your yeast is dead. Then you need new yeast. After that works out get out your stand mixer with a dough hook.

Add- flours, Course Sea Salt, Foamy Mixture, 2 T Caraway Seeds, & Canola Oil. Mix it with a fork till it’s not dry anymore and then work your mixer up to medium/high and let it mix for TEN MINUTES.

Gather your dough ball out and place it in a large bowl and cover with plastic wrap. Let this sit out at least 4 hours. After 4 hours-

Preheat your over to 425F and get tw large sheet pans and cover them with parchment paper.

Divide your dough into eights and cut each 8 in half so you have 16 pieces of dough. Roll each into a ball and space well on each pan.

Let sit out on hour and cover loosely with plastic wrap.

Each ball gets painted with egg white, sprinkled with caraway seeds and add a pinch of sea salt flakes. Slash each roll twice on the top.

Put one pan on bottom rack for about 15 minutes. Repeat.

Rye Rolls

Enjoy!!!!!!!

Cafe Peru – Newly Opened – Las Vegas NV – Peruvian Sandwiches – Worth a Try!

Cafe Peru is a small casual Peruvian Restaurant that offers a few ceviche appetizers, a few Peruvian Sandwiches, empanadas and a few more things. It’s extra casual. You order and pay at the counter and seat yourself.

We started out by sharing a fish ceviche.

It’s made of lime marinated fish with seasoned onions, crisp plantain strips, corn nuts, sweet potatoes, and Peruvian Corn. Green salsa and spicy creamy orange salsas were also served. It good but I think the corn (maybe?) should be cooked more because it still is a bit tough to eat.

my husband tried the Pork Sandwich.

It came with onion salsa and in the sandwich was sweet potatoes.

These sandwiches are quite large and are extra packed…….He said that the flavors are very good and the sweet potato adds a nice creamy sweetness to the sandwich.

I tried the Chicken Sandwich. To my surprise it’s chicken salad.

It’s enormous! Even half is enormous. It’s creamy and good. Maybe slightly too creamy but it taste good. I added some green salsa to it to perk it up.

Lemongrass & Lime – A Thai Bistro Las Vegas NV – Worth a Fork!

Lemongrass & Lime is a Thai Restaurant with two locations in Las Vegas Nevada. The Summerlin location has traditional tables and booths inside. This location doesn’t have a bar but wine is available.

They offer a variety of appetizers and most of your expected Thai Dishes.

My most recommended appetizer is the insanely delicious Golden pouches below. They are crispy won ton wrappers filled with mashed potatoes. They sit in the really yummy massanman curry with shallots. It’s a FORKING YUMdinger.

A few of the other appetizers are –

Vegan Fried Cauliflower

Crispy Spinach Salad

All the entrees are delicious –

Flecha Cantina – Las Vegas NV – Mostly Very Good and Worth a Fork!

Flecha Cantina is a Modern Mexican Restaurant and Bar by Actor and Local Resident Mark Wahlberg. They offer a slightly elevated take on your usual Mexican Type Food Restaurant. We’ve been here three times and on every visit they gave us complimentary passionfruit margaritas on our way to be seated.

Then they start you off with complimentary fresh chips and salsa.

Goat Cheese with Spicy Tamarind Sauce and Pistachios with Fried Pita Breads (This is very delicious and also is a very large serving)

Balsamic Beet Salad with Achiote Chicken (slightly fancier salad with extra moist and flavorful chicken)

Lunch Burrito Bowl with Salmon – (good but less flavorful than other dishes I tried here)

Fajita Salad with Achiote Chicken (Even on this visit the chicken was moist and flavorful)

Carnitas – First visit this was perfect. Second visit still delicious but not as perfectly moist

Chile Relleno with Shrimp – This was prepared perfect and was very tasty

Fried Ice Cream – Impressive and good ice cream but not crazy about all the cereal on and with the ice cream here.

Flecha Cantina – Mostly very good and still Worth a Fork!

EASY Basic Barbecue Sauce Recipe

I don’t usually purchase barbecue sauce. I only needed enough for two dinners so this is how I made barbecue sauce for 2 servings of barbecued brisket.

1/2 cup ketchup

1 teaspoon molasses

1/2 teaspoon smoked paprika

1/2 teaspoon sweet paprika

1/2 teaspoon hot paprika

Just mix the above together. That’s how you make a delicious quick very basic Barbecue Sauce.

I happened to have a 1/2 cup of caramelized onions so I added them to the barbecue sauce.

ENJOY!!!!

Asian Wok Las Vegas NV – Best American/Chinese so far – Worth a Fork!

Asian Wok is a small very casual American/Chinese Restaurant that also offers a few Thai Dishes located in the North/West part of Las Vegas Nevada.

You order and pay at the counter and do take out or grab a seat in the dining room. It’s not a fancy place but it seems clean.

They start you off with some crispy noodles with duck sauce.

So far we tried –

Pork Egg Rolls

My husband said that these pork egg rolls are very good but did have to ask for mustard for dipping. Most Chinese Restaurants here serve spring rolls instead of egg rolls.

Szechwan Chicken – Delicious, full of flavors and lots of fresh vegetables, tender infused chicken with a nice kick……….Not flat and sweet like most places serve.

Black Pepper Beef – Nice tender beef with that black pepper taste.

Ginger Scallion Flounder – delicious and the flounder was cooked so darn perfect. Also a very large serving that can feed two.

Spicy Chicken Shrimp – Nicely prepared chicken and shrimp that was flavorful with a nice heat

Asian Wok is the Best American/Chinese We’ve found so far in Vegas and is Worth a Fork!

Bistro 57 at Aliante Hotel/Casino – Some things Not So Good – North Las Vegas NV

Bistro 57 is an American Italian Inspirated Restaurant and Bar located in the Aliante Hotel/Casino in North Las Vegas NV.

Enter here

To the right is the bar area.

Or a little further down the hall is plenty of seating.

I’ve been here at least 4 times and the bread basket was never good but on my last visit the bread basket was even worst. This bread just tastes artificial with an artificial texture…….Kinda like bread dough mixed with chemicals and styrofoam.

3 out of 4 visits I had the Flounder Francese and it was reasonably good on all my visits.

3 out of 4 visits my husband had the rigatoni with sausage and that too was reasonably good.

On our 4th visit we both tried the specials.

The Snapper Florentine looks different from photo.

It’s so overcooked that you need a steak knife to cut it. Our server didn’t check on us till I ate most of the vegetables that weren’t so great because they seemed like old leftovers that were reheated. I told her that the snapper was over cooked. She did offer to get me something else but I didn’t want my husband to stop eating plus I lost most of my appetite from this mediocre dish.

My husband’s Pork Parmesan was also over cooked.

He didn’t complain because he said this kind of pork is usually over cooked.

Shared some pistachio ice cream.

The Pistachio Ice Cream was ok.
