WTFork is a Kiwano Fruit ?

The Kiwano is a horned melon and is also called blowfish melon. It is native to sub-saharan Africa but is also grown in California, Mississippi, Chili, Australia and New Zealand. The fruit has green jelly like flesh with seeds that may be undeveloped or maybe hard. Some people cut the fruit threw the middle and suck out the insides.  You can also cut it long ways and use a spoon as pictured.

East to West Cut

It taste like a mixture of cucumbers, kiwi, bananas and citrus all mixed together. The peal is also edible but some people dry the peel with paper towels and use the dried peal as a decorative object.

I read that adding sugar brings out the flavors so I added some. It’s light and refreshing. The sugar really intensifies the flavors.

It scraps out almost like a citrus. It doesn’t seem melon like at all to me. The skin smells just like kumquat.

This is an unpopular but tasty fruit because it is very expensive for it’s size. Depending on where you shop this 6 inch fruit sells for $3.99 up each.

WTFork is White Fungus

White Fungus is a kind of fungus that belongs to the mushroom family. In China white fungus is prized for medical benefits.

It’s believed to help with the building of collagen, also an anti inflammatory, a cholesterol reducer and also to lower high blood pressure among other things.

White fungus is usually sold dried like this.

To prepare you put some in a bowl.

Then you have to soak it well, rinse well and trim the hard part off and boil it briefly so you can use it. The white fungus should double in size  in about 15 minutes

and grow to 3-4 times the dried size.

Traditional recipes for white fungus are soups, stir fries and desserts or sweet soups.

Yellow Dates

Yellow Dates are very difficult to come by and have a very short growing season.

Yellow dates are also called barhi dates, barhee dates and khalal dates.

The yellow dates are not at their full ripeness yet but are very edible and some people prefer them this way.

When the dates are yellow these dates are crunchy like an apple but taste like brown sugar with a pleasant astringency in the mouth.

If you leave them to ripen and turn brown it’s said that they turn to taste like butterscotch candy.

I found out I didn’t know WTFork low carb was all because of this snack food “Quinoa Crisps” that I liked. I thought they seemed forking healthy and low carb as much as a snack food could be…after all they were called Quinoa Crisp. The nutrition seemed pretty natural and healthy with forking low calories and almost fat free……  I did forking notice that quinoa wasn’t a top ingredient in quinoa chips.

One ounce is only 100 calories and 1 gram fat BUT THE TOTAL CARBOHYDRATES are a FORKING 20 GRAMS FOR ONLY ONE FORKING OUNCE!

I always heard that a high carb food was something  starchy like a potato, bread or pasta so I looked up the nutrition of a potato. About 3 1/2 ounces or 100 grams of a plain baked potato has 18 grams of total carbohydrate. THAT MEANS anyone can eat 3 1/2 FORKING TIMES the amount of potato and that’s STILL FORKING 2 LESS total carbohydrates to equal the total carbohydrates in just one ounce of Quinoa Crisps!

So I thought I’d do a little more forking research and here it is.

Low carbohydrate diets are used to treat or prevent chronic conditions including cardiovascular disease, high blood pressure, and diabetes.

The typical low carbohydrate diet consist of meat, poultry, fish, eggs, cheese, nuts, seeds, leafy vegetables, some other non-starchy vegetables and berries.

Some fruits and vegetables are high carb.

Very High Carb fruits are

tangerines, cherries, grapes, pomegranates, mangos, figs, bananas & dried fruits

High Carb Vegetables are

beets, peas, acorn & butternut squash, water chestnuts, parsnips, potatoes, sweet potatoes, corn & plantains. (a serving of 100 grams of example cooked beets run about 9.5 grams of total carbs and 100 grams of yams run 37 grams of total carbs)

It’s nearly forking impossible to determine how many carbohydrates you should consume in a day. Basically if you are young, active and healthy it should be about 40% of calorie intake. If you  are 50 and over and or have health issues the number goes somewhere around 20% of your food intake and one site I came across rolled out a carb number of only 130 a day for people with high sugar or diabetes.

It’s hard to tell WTFork is low carbohydrate.

Butterscotch is very similar to Caramel.

Caramel is made from water, sugar, cream, butter and vanilla cooked to the firm ball stage…..340 degrees…..and is slightly burnt sugar and taste burnt- slightly burnt.

Butterscotch is brown sugar, butter, cream, vanilla and salt and is cooked to the soft crack stage…270-289…….degrees and not always but usually taste very sweet.

They do taste different. One of them I almost never eat.

Black Velvet Apricots

Black velvet apricots are actually 50% apricot and %50 plum. They have a slightly fuzzy skin like velvet and a really sweet juicy orange colored flesh. The first one I tried I thought started out tasting like a super intense apricot but then it finished more like plum with a slightly tart skin. The texture is better than an apricot it far more juicy and doesn’t have than grainy thing that apricots sometimes have.

WTFork is Broasted Chicken?

Broasted Chicken and Broasted Potatoes from Guido’s Restaurant Scottsdale AZ

Broasted is a cooking process trademarked by the Broaster Company. The broaster is a pressure fryer made for restaurant use. To make broasted chicken first the chicken is marinaded, then battered. The broasting process is suppose to make a juicier chicken with a crisp exterior. It’s suppose to lighter and healthier than deep frying.

This was the first time I tried broasted chicken. The restaurant I went to said they specialized in broasted chicken so I thought I’d give it a forking try.

The white meat was  very forking dry inside and lacked flavor of any kind. It was like forking chewing hay. But hay would have more flavor. Oddly the chicken got dryer and dryer as it sat on my plate. At this moment I wished I ordered something different.  I also wished I was in a different forking restaurant with better food. The exterior sort of flaked off and I think it was just plain flour and it seemed to lack any forking seasoning. I saved some for my dogs and they ate it but they didn’t wag their tails like they normally do when eating chicken.

That chicken was so bad it forking disappointed my dogs.

The potatoes faired better. They seemed light and fluffy inside but the thin crisp flour on the outside of the potatoes kept falling off. I should also mention to be fair my husband’s Hot house made sausage sandwich was good but slightly over cooked and had good but slightly dry sausage in it with nicely prepared peppers. He thought it was tasty.

The broasted chicken I tried is not forking typical of what broasted chicken is suppose to be. Also it might not be the typical that this restaurant always forking destroys broasted chicken. It’s a possibility that the regular cook was off and nobody marinated the chicken leaving the untrained dishwasher to do the best of his ability or at least that is what it forking seemed like. I note I don’t know WTFork they did to the broasted chicken.

WTFork is a Strata & South West Style Spicy Vegetable Strata Recipe

A strata is a baked and layered egg dish that is often made of milk, bread, eggs and cheese but can include vegetables and or meat. Unlike bread pudding the strata is layered instead of all mixed up like a forking baked pudding. The strada sits in the refrigerator over night so the bread parts get custardy. Here is my recipe for a South West Style Spicy Vegetable Strata. This strata comes out deliciously flavorful, a little spicy, cheesy, light and fluffy almost like a forking soufflé.

Ingredients Makes about 10 servings

2 cups of chopped zucchini (I used local Mexican Zucchini)

1 scant cup of scallion whites

1 garlic clove minced

2 hot roasted hatch chilies with stem and seeds removed. (mine were super hot but mellowed just right in this dish. Yours might differ).  If you don’t keep hatch chilies in your freezer for year long use then use jalapeños to your liking I’d suggest about 2 depending on size and heat)

1 red bell pepper (remove stem & seeds) chopped

1 green bell pepper (remove stem and seeds) chopped

1/2 red onion chopped

3 Tablespoons butter

about 10 twist of fresh ground sea salt

about 10 twist of fresh ground black pepper

9 whole eggs

4 cups of nonfat milk (Usually when I use a lot of cheese or butter I try to balance with nonfat milk)

8 oz. pepper jack cheese (shredded)

8 oz. sharp cheddar cheese (shredded)

10 oz. jalapeño cheese bread cut up (I purchased from Sprouts It’s spicy with jalapeño)

5 1/2 oz. corn tortillas torn up

1/2 teaspoon kosher salt

1/4 teaspoon ground black pepper

Some nonstick spray for your pan and some to put on foil cover.

Day 1 Directions

Melt the butter in a fry pan on medium high heat and add all the vegetables and heat till they are soft. Add fresh ground salt and pepper and remove from burner and let cool.

Mix well or whip up the eggs with milk and salt and pepper and set to the side.

Get out your pan and lightly spray it with nonstick spray.

Your first layer is about 1/3 of the bread and about 1/3 of the tortillas torn on pieces.

Now spread on about 1/3 of the vegetables.

Next is about 1/3 of the cheese.

Add about 1/3 of the egg/milk mixture and keep layering the same way until you are done. tortillas/bread, vegetables, cheese, milk mixture and tortillas/bread, vegetables, cheese, milk mixture.

Cover with plastic wrap and put in the refrigerator.

Day two Directions

Take Strata out of the refrigerator, set oven to 350 on bake and let the strata sit out about a half hour to warm slightly. Remove plastic wrap and loosely cover with foil that has been sprayed with nonstick oil to prevent sticking. The strata needs to be in the oven 45 minutes covered. After 45 minutes remove the foil.

At this point your strata will NOT BE DONE YET and needs to go back in the oven for about 35 minutes uncovered.

After around 35 minutes it should look like this.

WTFork is Taro Root and some stuff You Should Know about it

The Taro Root is a staple food for people around the world. The leaves as well as the root are edible but only when cooked. Some people feel they need to soak the root over night to release oxalate. All you have to do is fully cook the root.  Some people suggest adding some baking soda to however you cook the root to release the calcium oxalate or you can forking gout and or forking kidney stones from the taro root. If you consume some sort of dairy with taro root the dairy will block absorption of oxalate. So it’s a good idea to have a glass of milk, a milk shake or some sort of cheese when you eat taro root.

Taro is a staple food around the world and even though it sounds forking harmful to ones body it is not considered a high risk food when cooked. I also read several recipes for taro root and I do note in none of the recipes I read did anyone soak the taro root or in any of them did they add baking soda. It seems like most people around the world just forking cook them and don’t know or forking worry about the calcium oxalate.

Most Americans know the taro root plant as the elephant ear plant for their large glossy foliage in their gardens.

The taro root is believed to be one of the earliest cultivated vegetables and has three times the fiber of a potato and is an excellent source of potassium.

I fried it and made it into chips and made a simple dip of just whipped cream cheese, a little non-fat Greek Yogurt and flavored the dip with Sriracha.

Vadouvan is an Indian Spice Blend made with shallots and garlic. The mixture is pounded, rolled into a ball and then dried for a few days and then crushed.

Most Vadouvam consist of onion (or something onion-like), garlic, cumin seeds, mustard seeds, fenugreek and oil. Sometimes a few other spices are added.

That’s basically WTFork Vadouvan is.
